Easy truffle fries at home that i do all the time: air fry the frozen fries pour truffle oil on them put parmesan and parsley and toss it around in the bowl til fully coated in the truffle oil

I can definitely tell the difference between deep fried fries and baked fries. It's a texture thing, not a taste thing I guess. Plus, you can have a lot of control over how the fries end up in a deep frier. I fry them once at lower heat, toss them around over paper towel and then finish them on high heat while watching. Only takes a minute give or take at the end, but makes them so much more crispy. I also brine them first to make them saltier on the inside instead of that starchy potato taste.

Guga, one day, you should take the juice from a sous vide steak and coat some potato fries with it and then cook them to see how they come out. I pan fried some steak one time before I had my sous vide, and then cut some baby potatoes in half afterwards and deglazed the pan with the potatoes (wasn't an actual deglaze, but you get the picture). They came out amazing!
for making the garlic fries try making BG fries the next time. You drizzle clarified butter on them then hit them up with the garlic powder, seasoning salt and black pepper
