I’m a Southern Thai person who was born and raised in Songkhla for more than 19 years before moving to study and work in Bangkok. I will say these dishes are the real Southern Thai food. For me, they are the most delicious Thai dishes. I usually cook them myself and sometimes order them from Southern Thai restaurants in Bangkok although they are quite expensive here. When coming back to my hometown, Songkhla, I always ask my mom to cook them because I really love them all.

I am absolutely obsessed with Yings passion to revive ancient Thai cooking using natural ingredients and her philosophy and knowledge of it... The reason i started learning how to read and speak Thai 7 years ago was to be able to understand ancient recipes that haven't been translated yet. Every white-washed recipe aims to taste like a local Thai restaurant in the west which to begin with is missing 75% of the explosive flavours, fragrance and textures because most westerners can't handle the pungency of each element.
The teacher is great, the best lesson is teaching you to balance the taste of the menu that is very important for Thai foods
