The problem with all these vegan alternatives is that typically, the people who have the inspiration behind it and actually start developing these vegan alternatives havent actually had the real thing in so long, that that was the closest thing they could remember meat tasting like. They can't do a 1 to 1 comparison and get their vegan option to taste similar enough.
