What Great Sage was analyzing was the passive magicules radiating off of her body.
It's impossible to analyze a being with an Ultimate Skill without one of your own, unless they purposely drop that defense to hide that they have an Ultimate Skill, since that's the only thing that can really block an analysis skill from observing at least their base abilities.
The 10x his magicules is just what passively flows out of her body that isn't suppressed. Milim in actuality has infinite magicules.

Rimuru did have to fight veldora to release him from Micheal's control. He not only defeated veldora, but also the scorch dragon aswell. Afterwards he absorbed veldora to evolve to a new race: Ulimate Slime. (This is similar to a true dragon but a bit superior). He also defeated an enemy that guy and milim together could not- Yuuki with ease.

Apparently Gluttony is his skill Predator evolved into it after the battle with the Orc Lord.
Gluttony has 4 of the 5 effects of Predator (Analysis got transferred to the Great Sage), and plus 3 more, where 2 of these 3 is related to giving and receiving abilities to/from his subordinates.
So basically he can still use Predate as part of Gluttony.

You have to remember, all these skill evolutions - for example Rimuru getting Shizue's Degenerate skill when he absorbed her was not lost when Great Sage asked to "sacrifice" Degen to evolve itself in the Harvest Festival.
Instead, it is combined with new skills (or here, an "A.I", also called a wizard/sage).
You will notice that Rimuru can still use Degen to manage his skills. But Raphael (after Great Sage's evolution using Degen,) uses it too. It's never "lost". It always improves the existing skill/extra skill/ultimate skill.
