Hyderabadi style Vegetable Biryani | हैदराबादी बिरयानी | by chef Harpal Singh

  • Traditional Hyderabadi style vegetable biryani made by Celebrity Chef Harpal SIngh Sokhi.
    Ingredients
    • Rice soaked - 3 ½ cups
    • Carrot diced - 1 small
    • Yogurt - 1 ½ cup
    • Onion sliced - 3 large
    • Green peas - ¼ cup
    • Potato cubes - 2 small
    • Ghee - 2 ½ tsp
    • French beans - ¼ cup
    • Fenugreek leaves - 1cup
    • Dill Leaves - 1 tbsp
    • Cauliflower florets - 1 small
    • Ginger juliennes - 1inch
    • Bay leaves - 2-3
    • Green chillies slit - 2
    • Ginger garlic paste - 1 ½ tbsp
    • Peppercorns - 1tsp
    • Cardamom powder - ½ tsp
    • Caraway seeds - 2tsp
    • Red chilli powder - 1tsp
    • Turmeric powder - ¼ tsp
    • Garam Masala powder - 1tsp
    • Saffron - few strands
    • Kewra water - 2-3tsp
    • Salt to taste
    • Mint leaves - 15 - 20 fresh leaves
    method
    • Heat oil in kadai, add black pepper corns, caraway seeds, potatoes, carrots, cauliflower, onions, fenugreek leaves, dill leaves mix well and saute for 5 minutes.
    • Add ginger garlic paste and saute.
    • Add slit green chillies and ginger juliennes.
    • Add red chilli powder, turmeric powder and salt. Mix and turn of the flame.
    • Add green peas and french beans.
    • Add sour yogurt and mix, add garam masala powder, cardamom powder, ghee and fresh mint leaves. Mix well and keep aside.
    • In another kadai deep fry onions till golden brown and remove on absorbent paper.
    • Add half the browned onions to the vegetable mixture and mix well.
    • Boil water in a pan. Add bay leaves, remaining caraway seeds and salt to taste. Add the soaked rice to cook till it is half done.
    • Drain the cooked rice and layer three fourth of it over the vegetables.
    • Sprinkle some cardamom powder, garam masala, half the soaked saffron, half the brown onions and a few mint leaves on top.
    • Layer the remaining rice over it. Add the remaining brown onions, garam masala, mint leaves, soaked saffron, remaining ghee and kewra water.
    • Cover and cook on a high flame for two minutes, then reduce the flame and cook for 10 - 12 minutes and serve it hot.

    This was a HUGE hit! I've been on the lookout for a good biriyani forever now and am just an amateur chef. I omitted saffron and kewra and added whole cardamom while cooking and the taste was fantastic. Thanks for the detailed and step wise explanation.

    Beautiful! Amazing job on this video! I am a well-seasoned cook and vegetarian, and I'm currently expanding my culinary skills into Indian food. this technique is very different from the standard Caribbean and Latin American rice dishes that my family makes but I look forward to trying this. I must say though that I will be adding cashews and raisins to mine.

    I made this biryani yesterday. It was awesome.. initially i hesitated as recipe was not suggesting using biryani masala. But it really does not require that. Top two crucial ingredients as i guess are methi and ghee. the methi is unsung hero in this. Although i did not use dill leaves due to unavailability. But due to the combined taste and aroma of caramelised onions, ghee, elaichi powder, kesar, methi, shahi jeera, garam masala, pudina all cooked on dumm, made the final product heavenly. I did not know veg biryani too can be this good.
    Since many years i have been watching your recipes and am eagerly waiting for your 1 million subscribers mark, although you don't really need the youtube recognition, you are far ahead than that.
    I wish i could eat authentic home style chicken curry made by you someday.

      Maybe try soy yogurt. That's the only one I can think of that you can get unsweetened at stores. You can also make some yogurt at home.

    I just cannot resist myself from praising Mr.Harpal singh sokhi ji. Their are many chefs who cook fabulously but when it comes to teaching the art only a few people have that gift and Mr.Harpal is definitely one of them. Sir you articulate it so well and you also do not hide any secrets of the recepie. You just pour your heart out (Y). That's what a teacher should be like. I must say you are the best Chef I have ever come across. Mr.Sanjeev Kapoor might be a celebrated chef and your Mentor but when it comes to teaching the same art there is none parallel to you!!     Sirji, i've become a better cook after watching your videos. Thank you. Currently I'm almost adding all key spices to every curry I make for example, cardamom, clove, cinnamon, cumin, black mustard seed, Ginger garlic paste. After sometime all curries taste almost the same. So I'd appreciate if you make a video on " When to use whole spices vs powedered form and what effect it makes on taste and aroma" "when to use chpped onions-tomatos vs paste or puree and how does each method affect on taste and aroma?" " For specific taste and flavor or aroma which spice or combination of spices to use? " I know cooking is an art and there's no rule and taste is an individual factor but little knowledge helps choosing spices for particular dish. Am I asking too much ? Thanks in advance.

    Namaste chef. I made this biryani yesterday. It was my first attempt at making any biriyani and I followed your recipe all the way. My grocer had no kewra water so I substituted with rose water. The process was lengthy but so very rewarding. I was extremely satisfied with the result. What surprised me was the delicate balance achieved in the flavor and fragrance. Thank you for sharing.

    Aap ka bataya huaa onion sabji mere dostonko aur ristedaron ko bohot accha laga. Unhone bar bar onion sabji banakar khaye .Sab logon ne aap ka tarif kiya.

    I tried it today and it was awesome...did not have a few spices at home and still the taste was really great. It took some good effort and time but when end product is so good, its worth putting in the effort and time...thank you chef :)

    Chef, the manner in which you describe the Mise and then the recipe is incredible. I cook for a living as well, and now I have a better way to convey my recipies. I'm going to make this soon. I'll let you know how it turns out!
