- Soft Ginger Cookies
3/4 cup butter, softened
1 cup sugar
1 egg
1/4 cup molasses
2 3/4 cups all-purpose flour
2 tsp ground ginger
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
additional sugar for rolling the cookies
Preheat oven to 350°.
Using an electric mixer, cream together the butter and sugar for two to three minutes, scrapping the bowl.
Add the egg and molasses, beating well; and scrapping the bowl.
In a large bowl, whisk together the remaining dry ingredients. Gradually add the flour mixture to the butter/sugar mixture, beating just until combined.
Scoop dough into balls and roll the balls in the additional sugar. Place on a parchment paper lined cookie sheet and bake 12-14 minutes. Do not over bake.

Ive been making these ginger cookies for a few years now and we love them!
If it’s not inappropriate I want to share some dip you can smear on the cookies. It’s simple and so very good. I use it on the ginger cookies and pumpkin cookies. Here’s the cookie dip recipe:
16oz soft cream cheese
15oz can of pure pumpkin
2 C powdered sugar
1 teas cinnamon
1 teas ginger
1/4 teas pumpkin pie spice
Thats it! Blend it all up and dip cookies in it!

yay cookies, i love ginger and molasses. My way of molasses is breakfast dessert, mashing it with some soft butter in a saucer and scooping it on a big fat homemade buttermilk biscuit. ty both!!!
Oh my goodness - my grandfather did that exact same thing! I can picture him in my mind's eye doing that very thing. He was a farmer and he wanted something sweet with every meal - three times a day! The nice thing about molasses is that you can put several tablespoons into whit sugar and make your own brown sugar. I have not bought brown sugar for a very long time.

If you freeze it do you have to defrost it before baking ❤❤❤
You need to flatten them (before you freeze them) and bake them probably 14-15 minutes if baking from frozen. If they aren't frozen, then bake 11-12 minutes. Watch them because ovens don't all bake the same. Happy baking and Merry Christmas!

How do you you store them, how long will they stay soft?
Just make sure to store them in an airtight container. They’ll be soft two or three days at least (ours are gone quickly!).

I LOVE MOLASSES WITH A BISCUIT BUT I REALLY LOVE IN GINGER COOKIES AND GINGERBREAD CAKE WITH THE LEMON SAUCE POURED ON IT .

After my granddaddy finished his meal, whether it was breakfast, lunch, or dinner, he would put some butter on his plate, pour some molasses over the butter mash the two together until combined and sop this up with grandmothers biscuits (which she made with every meal). He was cute when the butter, molasses and biscuits didn't come out even. He would keep combining butter and molasses and dip the biscuits until the combination was all gone at one time.
If you spray Pam in your measuring cup your molasses will slip right out.
