The Perfect Picnic Coleslaw

- Are you in the mood for a picnic?! If so, I have your coleslaw covered! And I'll admit: I'm opening up the creamy vs not dressing debate. Well, I finished the debate with this recipe. This is the perfect picnic coleslaw. It's bright, tangy, and amazing with any picnic food!

INGREDIENTS
- 3/4 cup neutral oil (safflower, grapeseed)
- 1/4 cup vinegar
- 1 tsp celery seed
- 1 tsp dry mustard
- 1 tsp salt
- 3 tbsp honey
- 1/4 cup roughly chopped onion
- 1 lb cabbage shredded
- 2 carrots shredded
- 1/4 cup roasted sunflower seeds (optional)
INSTRUCTIONS
For the dressing:
- In a large glass measuring cup or blender container, combine the oil, vinegar, celery seed, dry mustard, salt, honey, and onion. Blend with a countertop or immersion blender until emulsified and smooth, 1-2 minutes.
- Pour into an airtight container and store in the refrigerator until ready to use, for up to one month.
For the coleslaw:
- In a large bowl, combine the cabbage and carrot. Add dressing to taste. It is best to start with a smaller amount of dressing, about ⅓, and stir well. Taste and add more if needed. Top with sunflower seeds and serve.
NOTES
- The coleslaw can be made two hours ahead of time. The thicker the cabbage is cut, the longer it will hold up in the refrigerator before breaking down.
- Add the sunflower seeds right before serving.

Not a big fan of summer but summer food and gardening gets me through the season. Coleslaw and fresh tomatoes and watermelon get me through the season

Well hello! I usually buy the pre-shredded cabbage and the dressing, I know, I know but it’s easy and my husband likes it. I’m going to try this dressing recipe though , it’s not as thick and goopy as the bottled stuff you get in the store. The addition of the onion to the is interesting. Thanks

I just love your recipes 😋
We make a mixed ( with the onion and even fresh garlic) dressing like this in our family. It has mustard and even herbs and we keep it in the fridge together with fresh and clean greens or veg so each meal or if somebody is hungry there is always a salad made in seconds. It keeps fresh for days and you can change it up to the seasons.
Thank you Kaleb. I am one of those who really doesn't care for coleslaw. The ones I have tried are very creamy and all you taste is the unpleasant dressing and coleslaw is very limp no crunch. I never had a desire to make my own but you have changed my mind to at least give it another try. Even if I don't like the coleslaw I know I will love the dressing.
