In summer, I often enjoy a pasta salad, and I dont need any recipe for that. Cooked but al dente pasta, olive oil, vinegar, salt and pepper is all you need. And from there, depending on what you have or what you like, there are no limits: tomatos, cucumber, peppers, tuna, olives, pomegranate seeds, feta cheese, mozzarella cheese, onion, herbs (mint, parsley or basil), sweet corn, chickpeas, spring onions, watermelon etc. Its a good and tasty way to use up ingredients.
I look forward to this type of salad yearly. Might be two months until all the veggies come due, but you gave us some summer today ❤
I had a great pasta salad made by our Filipino maids when we lived in Hong Kong. Just fusilli, pineapple chunks, and mayo. There was a garlic underlay -- a clove rubbed all over the bowl, plus a few whole cloves boiled with the pasta. It remains a favourite.

Very nice. The only change I would make is to use lemon juice instead of vinegar in the dressing. Though, actually, when make pasta salads I choose tri-colour fusilli -- the red and green flavoured by spinach and tomato. But it does not make much difference, and there is plenty colour in this. Just added a cucumber to my shopping list.

You brought a lump to my throat when you said wine from the Rias Baixas. We lived in Pontevedra for four years and Albariño is definitely something i miss. It doesn't travel, you can only drink it there. 😢 But thanks for the recipe, ill definitely be making it soon. ❤
Soy de Pontevedra y creo que el Alvariño es el vino que mejor combina con los pescados y mariscos. Es verdad que aguanta mal los viajes pero hoy se puede adquirir en casi cualquier pais del mundo, no obstante quizas los precios por los que se vende por ahi fuera hace que no merezca la pena, no obstante un vino blanco gallego que aguanta mejor los traslados y también el paso del tiempo es el GODELLO

Spaniard here. I´ve been making something like this since forever, but with a few major modifications:
- Either pasta of chickpeas, but never both at the same time. You can also subsitute them with rice or quinoa.
- Always combined with a can of tuna, salmon, chicken or sardines: much more tasty, and nutritive.
- Add fresh onions (not sure about the English name, but the ones you don´t need to cook beforehand), hard-boiled eggs, sliced carrots, avocado, lemon, garlic...
And then you have a bunch of dishes with different textures and different tastes, with virtually no cooking time, you could literally live off your entire life without eating anything else.

@@1650million de pelo al huevo nada, "pasta of chickpeas" puede ser pasta hecha con garbanzos, porque hay pastas hechas con legumbres, y lo escribo en español para ti, por si te apetecía editar una letra para que se entendiera bien. No hace falta ponerse tan a la defensiva, un abrazo

Have you heard of "Thousand Island Dressing" and "Rhode Island Dressing"? They are dressings. We have them here in the grocery stores in Sweden, but I have always wondered where they originate from, and if they exist in other countries. Or do you think that they are swedish dressings?

Thousand Island Dressing is widely available here in North America -- it is basically a combo of ketchup and mayo and no self-respecting cook would have it in her house. I do not know the other one.

Just in time for warmer weather! When I saw the picture of it before watching the video, I thought the red was tomatoes.
So did I but I was glad they were not -- tomatoes do not really do well in this sort of salad, which is essentially CRISP, aside from the pasta.
The bell peppers add a nice crisp texture to the salad :) Much love!
