How To Bake Flat Cake Layers

  • The secret to baking flat layers and avoid the formation of domes is simple: First, it's important to tap your pans to release any air bubbles, I allow my batter to rest for 5 minutes in the pans then tap a few times to release air bubbles. Second, the use of baking strips of damp towels (simply damp some old towels you have) is super important! Finally, the right temperature is crucial, each oven is different so it might take you a few tries to know the perfect temperature for your cakes but I always bake at 165C (329F). The baking time varies according to the size pan but it usually is between 40 and 50 minutes.
    When your cakes are fully baked, carefully remove the baking strips (be extra careful not to burn your hands!), then allow the layers to cool down, at room temperature, for a few minutes, and finally remove the layers from the pans.

    Im confused, she fliped the cake. The bottom is always flat, the top is portion isnt. And at :53 seconds you can see that its not flat. Am I missing something?

      Hi there,
      From my understanding and previous experience, the damp towels or strips that you can buy are used to help flatten the top portion of the baked cake. The dome that you see has reduced significantly by using the damp towels and if the towels were not used then you would see a higher dome. It looks like this baker is demonstrating that by flipping the cake out it will also sit flat rather than lopsided or on a tilt because the baked top portion is essentially flat.       As a baker, from my perspective of the video. She had a bumpy side, which is why she flipped it over. If you don’t want a bumpy side, just trim it using a knife. And go on your process. It is also important to add simple syrup to make your cake even moist and stay moist for a few days.

    Do you also need to bake on a cookie sheet? Does that help the bottom not overcook?

      Hey! Not necessarily, I do because it’s easier to take the pans out of the oven but I didn’t notice a difference as long as you bake on the middle rack ☺️

      Soak in cold water first. It keeps the cooking evenly distributed as the tin gets too hot too quick otherwise.

      The water content helps slow the conduction of heat from the oven onto the metal pans so no towels means a burnt crispy edge and so the outside of the cake cook faster than the middle, so the middle starts to rise because of that. Basically. The steam/towels make everything cook at the same time.
