Regional Greek cod with tomato and onion sauce / Bourdeto

    4 portions
    Ingredients
    1300gr cod
    1 kilo tomatoes, grated
    ½ bunch of parsley
    2 spring onions, in slices
    2 white onions, mashed
    6 garlic cloves, mashed
    6 tablespoons extra olive oil
    60ml white wine
    1 tablespoon red pepper flakes
    1 teaspoon paprika
    1 tablespoon tarragon
    1 tablespoon tomato paste
    2 lemons, juice
    Himalayan salt
    Freshly ground pepper
    Execution
    • Salt and pepper the fish and leave in the fridge.
    • On the pot, sauté the onions and the garlic over medium heat.
    • Add the red pepper flakes and the pepper and add the wine.
    • Wait till the alcohol is evaporated and add all the remaining ingredients except the fish and lemon juice.
    • Over high heat, stir well, and close with the sec quick.
    • Set the audiotherm for 2’ on the ‘turbo’ sign.
    • When the first red indicator reached the ‘soft’ sign, lower the heat.
    • When the second red indicator reached the ‘turbo’ sign cook for 2’.
    • Wait till all the indicators return to their original state and open the lid.
    • Over medium heat, add the sauce and the sauce on the oval pot.
    • Close the lid.
    • When the green indicator reaches the red sign, lower the heat.
    • After the black sign cook for 20’.
    • Open and add the lemon juice.
