    That second dish when it came out of the oven 😍😍. If you haven't tried it then I also really love bharli vangi, it's a Maharashtrian dish of spicy stuffed aubergines. Thanks as always for the recipes, Chetna :-)

    Although aubergine is not a preferred veg in my house, pretty sure I'd love the pakora because of the extra crunch and spice. Wonderful compilation!

    Hi chetna!! They all look absolutely delicious, eggplant is a fun vegetable to cook with, but I loved the dish with the tomatoes and mozzarella and the fried eggplant, very mouthwatering.

    I just started getting into adding aubergine to my dishes so these are perfect! A suggestion for the 2nd recipe, since the mozzarella takes less time to cook than the aubergine it could be a good idea to add it in towards the end of the cooking time so that it doesn't all ooze out.

    Everything looks so good! If I had to pick a favorite, I think it would be the hasselback. That may just be because I have strong memories of eggplant parmesan. 😋

    My favorite veg!! I love all of them, except the Italian style is too much fuzz for my taste...the pakora is my top fav!!

    omg are you serious..... I put it on 160 degrees and after 45 minutes it hasn't cooked at all.... Please specify European heat? I had no idea it wasn't degrees. lol Anyway another similar recipe says 425 for 15 minutes.... So idk, I put it at 400 and just going to take it out when it looks done. Nice recipes thank you
