  • Here's a delicious sourdough bagel recipe that captures the tangy flavor of sourdough while maintaining the chewy texture of a traditional bagel. This recipe includes a few steps, but it's worth it for the taste and texture of homemade sourdough bagels.
    Dough Ingredients:
    • 170g of active sourdough starter
    • 1¼ cups of water (255g)
    • 2 1/2 Tablespoons of sugar (32g)
    • 2 teaspoons of salt (12g)
    • 4 cups of your choice of flour (500g)
    Water bath:
    • 6 cups of water
    • 1 Tablespoon of Sugar
    Toppings (optional):
    • Everything but the bagel
    • Cheddar
    • Asiago
    • Sesame seeds
    • Salt
    Instructions:
    1. Mix the Dough: The night before you want to make these combine, in a large bowl, 255g of water, 12g of salt, and 32g sugar. Mix until the salt and sugar are dissolved. Then add in 170g or sourdough starter and mix to combine. Lastly add your 500g of flour and mix to combine.
    2. Knead the Dough: Knead the dough for until it becomes smooth, elastic, & can pass the window pane test.
    3. First Rise: Place the dough in a bowl, cover with a damp cloth or plastic wrap, and let it rise at room temperature overnight or until it has at least doubled in size.
    4. Shape the Dough: Shape the dough into a ball and let rest on the counter for 20 minutes.
    5. Divide the Dough: Turn the dough onto the counter and divide it into 8 equal pieces (or more if you want smaller bagels). Roll each piece into a ball then let rest for one hour under a damp towel.
    6. Shape the Bagels: Poke a hole through the center with your thumb and gently stretch to form a ring. The hole should be wider than you would want it to be at the end of the process because it will shrink as it proofs and bakes. Then place a damp towel over the bagels and allow them to rest for another hour.
    7. Prepare the Boiling Water: In a large pot, bring 6 cups of water to a boil and add 1 tablespoon of sugar.
    8. Boil the Bagels: Preheat your oven to 425°F (~230°C). Line a baking sheet with parchment paper. Gently place the bagels into the boiling water, 2 at a time, for about 30 seconds on each side.
    9. Remove and Drain: Use a slotted spoon to remove the bagels from the water, letting them drain briefly.
    9. Add Toppings: While the bagels are still wet, sprinkle your desired toppings onto each one.
    10. Bake: Place the bagels on a parchment-lined baking sheet and bake in the preheated oven for 20-30 minutes, or until they are golden brown.
    11. Cool: Let the bagels cool on a wire rack for at least 15 minutes before slicing and serving.

    - Starter Activity: Ensure your sourdough starter is active and bubbly before using it in the dough.
    - Hydration: The dough should be firm but not dry. Adjust water or flour slightly if needed.
    - Boiling Time: The longer you boil, the chewier the bagel will be. Adjust boiling time to preference.
    - Flavor Variations: Add cinnamon and raisins, blueberries, or other flavorings to the dough for different bagel varieties.
