      When something hydrophobic (i.e. unable to absorb water) punctures the surface of a bubble, it subsides. A dry wooden spoon destabilizes the bubbles when they come into contact with its water-repelling surface. This makes the boiling water retreat.

    Rie's Tare sauce recipe:
    +15mL sugar
    +15mL mirin
    +60mL rice vinegar
    +60mL soy. Bring to a boil to dissolve sugar.
    +45mL water
    +45mL sesame oil
    +juice of half a lemon. Refrigerate.

      @@duru_mii @reyner hey guys, sorry I didn't used a proper measurements. I use do it by feel 😅😅. Depends on your taste, I like it salty so I put more soy sauce. Sesame oil is a must have. If you can, put a whole garlic in the oven to roast for 30mins, mash after, game changer. I've done it so many times till this point. And my Chinese mom approves 😂

    The spaghetti-to-Soba hack is something I'm going to have to try.
    Being Chinese - All Alvins comments hit me right in the feels. (and I kind of felt attacked too) :)

      @@random_thing- it does! Be sure not to put too much baking soda into the water though, especially if you don't plan on rinsing tho noodles. It's very convenient, since I can't find good ramen noodles at my normal grocery store, and it's always so over priced, a problem in most states in America.

      @@yoons9294 you know what the funny thing is, I did try this hack and I did add too much baking soda and didn't rinse the noodles so I was just left with not good tasting ramen but oh well, thanks for the advice, I will try again and make sure to keep those things in mind for sure

    The hand cut noodles (刀削面) that Alvin uses is my absolute favourite kind of noodles to cook with at home! His recipe is quite similar to my family recipe, except we also add in julienned cucumbers, homemade Sichuan chili oil (for more kick than 老干妈), and cilantro! Definitely important to cook the noodles slightly undercooked so it retains the chewy QQ texture!

      @@nikhildeo9415 I haven’t looked for them in H-Mart. They’re a pretty Chinese-only noodle type, so you would have better luck in a Chinese supermarket.

    My grandpa would make cold noodles with just peanut butter, black vinegar, and sesame for me as a child! (Even with just those ingredients it was super delicious and I would ask him to make it all the time!) Thanks for sharing your version, Alvin!

    I love Skippy Super Chunk! I used to hide it a bit from my husband, just getting a small jar here and there but anytime I had it I would demolish it so fast, eating it and cooking with it. When our shifts changed he started doing more of the shopping and I put PB on the list. He came home with the BIGGEST jar of Skippy I had ever seen outside the Costco 2x pack. He said that was the next step after I solo'd that whole giant jar in about a month

    Alvin, a useful advice (in case you aren't already doing it): put a damp cloth/paper towel under your chopping board, it won't slide and you'll avoid injuries!

    Alvin just made the perfect noodle for me (with the exception of Liang Pi, which is the worlds best noodle dish). Those knife cut noodles, the peanut butter, the garlic, the black vinegar, even my favourite Laoganma flavour with the fermented beans! Perfection!

    A couple of advices for boiling pasta: put salt only AFTER it's boiling, as salt water takes longer to reach boiling temperature; it's not a biggie if the water boils "too much", as long as there's enough water for the pasta to boil in and you stir it regurarly, because the only thing that could happen is evaporation. Also, putting things on top of the pot might repel nearby bubbles but won't change the temperature of the water.

    I've only been living in Japan for two and a half years, but YEAH whenever the cold noodles show up in the combini, I'm like 'oh no... Summer Approaches.' Ditto with oden. You know it's winter when oden is out. And steamed buns!!

    Those both looked awesome! Mine are so plain I make 🤣 just some garlic, soy sauce and gochujang mixed with some of the salted pasta water. Add toasted sesame oil and scallions and cilantro. Takes less than 5 minutes to put together and so yummy 😋

    We made both. I have tried hiyashi chuka at a restaurant so I have a peg. For the peanut noodle, we just followed the instruction, both tastes great !

    Love hiyashi chuuka! I make a version with goma sauce as one of the ingredients and I usually put ice with the noodles at the end of washing to really cool it down and remove the ice when I'm ready to finish the dish.

    I usually make something similar to Alvin, but using sesame paste instead of peanut butter, then also adding blanched spinach, tomatoes and matchstick-cut carrots and cucumbers, like Rie.

    I made Rie's recipe, and love that the second serving as leftovers was even better (I put the noodles, sauce, and toppings in different containers and combined them for lunch today).
    And I noticed the bright sauce was even better when I slurped the noodles.

    Alvin - shout out to your granddad I swear by Skippy PB. It is the best for Chinese cooking b/c it dissolves easily, rich, creamy & it contains sugar so it's easier to balance all of the flavors together. Whether I'm making cold noodles, soup, chili noodles or a sauce I use Skippy. Other PB's don't incorporate easily into water especially those that you buy already separated into oil and paste. My stepmom is Chinese & taught me how to cook Chinese cuisine for ten-years before I went off to college. I wish you had done/been a part of the Taiwan videos b/c they clearly lacked a person with knowledge of Taiwanese food beyond that of a foodie.

    My favourite chilled noodle dish is a Thai dish called "ยำวุ้นเส้น" (pronounced "yam woon sen") which consists of glass noodles, fish sauce, chili (dried or otherwise, both work in my opinion), chicken stock powder, cilantro, sliced onions and tomatoes, your preferred protein (chicken, beef, pork, shrimp- anything goes), lime juice, and sometimes people sprinkle over crushed peanuts for toppings. It's simple but really delicious. :>

    I like my hiyashi chuka with sesame dressing. Also make it plant-based so sweet corn or abura age instead of egg & mixed beans, panfried tofu or seasoned muhrooms instead of ham.
    Will try the spaghetti hack.
