    Hi! Chef Sandy Daza. I love your bangus sisig by watching I can say napakasarap! Sa dami ng pinanood ko na iba ibang recipe ng bangus sisig your version in making this recipe is the best. I really like to learn how you made it. May kasabihan na kung May tiyaga May nilaga. Lol I watched many times paulit ulit how you did.     Ako po Yung binabad bangus pinapatong ko muna sa kitchen paper towel para mawala yung excess liquid then pinaguvulong ko po sa arina then pinapagpag ko ng konti bago ihulog sa kawali para di matilamsik. Ang ganda ng pagka pritp po kahit pa bagong kaliskis ang bangus di matalsik ang mantika. Tip ko po yan.

    Hahaha!! Sandy Daza is so lovingly funny and amusing. He really has that very amiable vibe and personality about him. I met him years ago and there's not an ounce of arrogant air in him. He seemed very humble... a trait of confident people who do not have to prove anything to anyone :)

    Substitute Ranch Dressing for mayonnaise and brainy.
    Variations:
    Sisig topped Grits/ Oatmeal alla Lowlandia
    Sisig Samosa with Cilantro Chutney
    Sisig Chicken Biryani with Beurre Noir
    Sisig Chicken Paratha with raw onion slice
    Sisig Tacos on blue corn tortilla with traditional topping
    Sisig Burritos with traditional stuffings.
    Sisig topped Palabok Noodle with Coconut cream sauce garnished with vegetable Lumpia (Banh Tam Bi)
    There are no rules. If it looks and taste good, it's good. It is what it is.
    Remember color, texture, and contrast in taste (umami).
    Preferred sigsig to be serve with green herby salad with sweet patis on the side.

    Have you ever tried "Sisig alla INC/ alla SDA/ alla Imam Donald
    Use pork innards/offals. Parboiled in stock with Massaman Curry paste.
    Charred grilled alla carbon for that burned taste.
    Chop to desired texture and add raw pork/beef blood (3 tbs./lb.) while chopping.
    Season and flavor with salt/patis/bagoong/prahok/padek, Calamansi, calamunding, lime, kaffir lime, Thai bird chili (30/lb.), ginger, garlic, purple onion, Thai basil, cilantro, culantro, chicken powder and msg.
    Served anti lipid and HTN pills on the side. Smile

    You need to pat dry the bangus before dropping it in hot oil. Otherwise you will have an explosion.
