To everyone: A cartouche is no substitute for a lid when you are boiling something. For simmering and to hold something warm it‘s okay. Everything above that = not okay… atleast if you don‘t want to eat paper…. Especially in a stew or something similar to that. Hot parchment paper rips easily apart. Trust me, I saw that happened at work.

no lid: use foil or a sheet tray, both works best so the foil doesn’t move underneath and you have a spot to put spoons that is out of the way and easy to clean

In Argentina we just use some of those baking things that go in the oven, either the round ones or the rectangular ones, just put it over the pot. You can also do it with a similar diameter pan that's not being used

A cartouche is not really a 1:1 sub for a regular lid. It’s used when you want to maintain moisture, while still allow some steam to release. If you just need a lid, use a sheet pan, it’s much cheaper too as parchment can be expensive. Good vid tho, it’s something every cook should know how to do.
When I worked in restaurants, one time the FOH manager came back and she was going to boil something up for the bar and she had the pot in her hand, she was looking around, someone asked her "what do you need?" And she said "I'm trying to find the lid" And I shouted across the kitchen, "Lids are for squares, use a damn bowl" (Stainless steel bowls, kids, they make a good pot lid, they fit any pot, and the shape makes anything that evaporated drain back in more easily)

I used this for Foui Grasses,and other Aspic Meat Mushroom Silliness. I have that knowledge........but I'm always on the Lookout for a cheap Big Ass Round Heat Safe product, so I can use it when I need it......I got ' em all😉

You can also use any two equal-length sticks, like skewers or chopsticks, and tinfoil. Make a cross with the sticks and wrap it in tinfoil so that you have a flat surface.
