we - Vietnamese people prefer to dip this in nước mắm chua ngọt ( a combination of fish sauce + sugar+ hot water + chopped garlic and pepper)
these look damn good. That sauce! Question though. I'm a little afraid of sambaal oolek, could I reduce the quantity or use chilli crisp and/or chilli oil at a smaller amount and not spoil the recipe?

Those lettuces are filthy things, full of grit.
