►Ingredients for the Nashville Hot Chicken
►Brine:
1 kg chicken thighs strips Or 1 whole medium size chicken cut into 8 pieces
1.5 tsp salt
►Hot Spiced Oil:
3 tbsp. cayenne
1.5 tsp. red chilli (optional)
1 tbsp. garlic powder
1.5 tbsp. dark brown sugar
2 tsp. paprika
1 tsp. salt
(Save 2 tsp. to use in the buttermilk dip)
1 cup (240ml) hot oil
►Dredge:
2 cups (240g) plain flour
2 tsp. salt
►Buttermilk Dip:
2 large eggs
2 cups (500 ml) buttermilk
2 tbsp. (30ml) pickle juice
3 tbsp. (45ml) hot sauce
1 tbsp. (15ml) soy sauce
2 tsp. seasoning
►Frying
1 litre sunflower or vegetable oil
►Ingredients for the Fried Chicken Rice
2 tbsp. hot spiced oil
3 cups boiled rice
1 tsp. blackpepper
1/2 tsp. salt
4 - 5 fried chicken strips
1 tbsp. dried parsley
2 tbsp. soy sauce
►Ingredients for the Ranch Sauce
1 cup (250ml) mayonnaise
1/2 cup (150ml) buttermilk
2 tbsp. ketchup
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. blackpepper
1/2 tsp. salt
1 tsp. mixed dried herbs
2 tsp. dried parsley
