    Ingredients:-
    3 large potatoes
    Oil for frying
    1 tbsp corn flour
    1 tbsp Salt
    1 tsp Chilly powder
    1 tsp coriander powder
    1 tsp chaat masala
    1 tsp pepper powder
    Parsley
    Black Pepper
    Method:-
    Peel the potatoes properly and cut into french fries shape. Dip the cut potatoes in cold water and then pat dry carefully with a towel. Fry the potatoes for 30 seconds in moderately hot oil and transfer on absorbent kitchen paper towel. Transfer the half fried fries on a tray and pat with a towel so as to absorb the oil. Now add the corn flour and mix well. Freeze the cornflour coated fries for 30 minutes and fry again in moderately hot oil until crisp and golden brown in colour. Once fried, transfer them on a tray and season with salt, coriander powder, chilli powder and chaat masala. Garnish with fresh parsley and black pepper and crispy and crunchy french fries are ready to eat!

    Instead of frying them for 30 sec. I boil them with salt in water and then dry using kitchen towel and tissue paper and thn rest is same. In ths way less oil is use.

    I made French Fries for the first time yesterday using this recipe (minus all spices) and it turned out fantastic! My mom is picky with fries and wants them crunchy. She loved it!       Hate me Hate You ! If you skip the freezing step you will have successfully made soggy fries. No one likes soggy fries. I don’t know the science of it, all I know is that it allows fries to become crispy (or at least more crispy).

    Oh my gosh !! I made this and it was soooo sooo soo yummmy crispy and everything...I didn’t add any spices though. I like it plain. But I had to fry more than 1 minute the second time.
    This is the best french fried I have ever made. 😍
    I ate it with tandoori chicken and white sauce(my own recipe).
    I wish I could post a picture of that yummy dish here and I recommend everyone to tryout this recipe.

    I like the double fry and freezing. Both are the best for crispy fries, the first fry precooks and draws moisture out then freezing draws more moisture from the fry to the outside where it is evaporated off in the second fry. Here is what I use for Mcdonalds French Fries
    The way I get crispy fries similar to Mcdonalds:
    1) Cut them thin and soak them first in cold water for at least an hour up to 4 hours to get the starch out, ice water is best. You can tell they are good when the water runs clear when you rinse them
    2)While they are soaking the last bit bring a pot of water to a boil with some white sugar and corn syrup in it
    3)After they have soaked in the ice water turn OFF the boiling sugar water and transfer your fries into that for 5 minutes to pre cook and give them that extra flavour most people are missing in their home fries.
    4)After 5 minutes in the shut off water take them out and pat them dry, at this point you can freeze them for later use or cook them right away. (I always do a ten pound bag of Russets all at once and freeze the leftovers for later use then make more after those run out.)
    5) To COOK them you need to do 2 SEPARATE deep fries this is essential for crispy fries at home, the ones Mcdonalds gets in the store have had all of this done to them up until that point so they only need 1 cook in store
    6)2 minutes in 350-375 oil (I have a little deep fryer so I leave it on 375 to try and keep the temp up) then take them out and let them cool until they are cool to the touch, it is beneficial to pat off the oil and moisture that seeps out as this point but a lot of the time I don't for the mess and to save paper towel.
    7) After they have cooled back into the same temp oil for 5-7 minutes depending how thick you cut them
    Some tips for the best fries:
    1)Russets are best
    2)Cut them thinner than you think you need to if you like them like Mcdonalds/thin, I always used to think they will be too thin but you figure it out after a few times
    3)If they are not staying crispy after you cook them that is probably because your oil is too old/dirty. NEW oil is best for crispiness and USED oil adds more flavour to your fries, the BEST fries at a Mcdonalds are not right after they change the oil but they are the crispiest. The BEST fries are about 1-2 days after its been changed depending how busy it's been, they are still crispy but have more flavor.

    Only tip I would like to add is the freezing after the blanching in oil is not needed, just simply cool them down in the fridge is enough and you'll have an even more tasty end result but further YES...this is the way to do it...older potatoes...wash them..dry them...blanching at medium heat...cooling and fry till golden brown crisp in hot oil 👌👌👌😍😍😍 greetings from Belgium! ✌

    Great video! I've been watching a few "home made french fry" videos, and every single video has some variation of..."cold water for 30 minutes, dry, chill, wait, double fry". And every single comment section says "liek oh mah GAWD. I dunt want to cook for an HOUR bruh...so dum. I can make cereal in like 5 minutes!11".
    We used your method, and they turned out fantastic!

    you should half boil in salt water, then freeze and the fry at 140c for best crispy fries

    So many people in the comments are complaining about how much work this is. But remember.... you could make a huge batch of these and freeze the entire thing. And just fry them again when you're ready. It doesn't have to be this much work every single time
