She does a basic rice pudding, adds of course, vanilla, cinnamon and sugar.. but when its done cooking and its still hot she stirs in about an 1/8 of a cup of Orange blossom water! It gives it a unique taste but its amazingly good!! You have to try it Chef John!!! :)
I just made this and tried about a teaspoon of it (after it was done cooking) and I have to say....I almost risked getting 2nd and 3rd degree burns on my tongue because it was so GOOD. Instead of Chinese 5 spice I used just cinnamon. Amazing recipe, thank you for sharing!

I also don't need to add sugar when using the vanilla almond milk and the liquid ratio is closer to 2 cups per 1/3 cup of rice. I always make it without the egg also but every time I make it standard or non standard version, it is awesome. Best rice pudding recipe ever!
I make this recipe with a hint of cardamom, a touch of nutmeg, and 1/8 tsp of cinnamin in the pudding at the end before the vanilla. Taste is a bit south Asian, and extra awesome. This is a good recipe to experiment with flavors.

John G that risotto route is way too much work. I am from Trinidad and we make rice pudding and use plain old white rice. It is boiled in water flavored with grated ginger and cardamom, until the rice is really, really soft. Once it is thickened, we add condensed milk and carnation milk and whatever warm spices you need. You can substitute coconut milk for the carnation milk. Sooo good.

Came back to make sure I had liked this because I make this all the time. This is one of those recipes that counts as self care. I leave out the yolk cuz I'm lazy, put about 1/2 the sugar, and steep a cinnamon stick and a few shakes of cardamom in the warming milk. Try it!
I made this again today but my mango wasn't ripe. So I improvised and served it with sliced bananas, blueberries and a dusting of cinnamon/ginger. the bananas mixed very well with the cinnamon and mellow coconut taste, while the blueberries and ginger gave it a bit of kick. Really superb combination, I strongly recommend it to anyone who tries this! (:

Great recipe, I use vanilla extract and coconut extract too give more coconut flavor. Then I broil it in the oven with some lime zest. I finish with fresh berries and shaved chocolate.

I went to a local spa that is Asian themed and afterwards you have Asian food and this is where I fell in love with coconut rice pudding. I googled the recipe and was soconfused cause everyone seemed to do it different. I am super glad Chef John I decided to go with my gut instinct and do yours because it was so tasty. I stumbled on the creamy affects of using coconut milk in homemade cornstarch pudding. Once when I ran out of whole milk I substituted half of it with coconut milk and it was DELICIOUS!

I made this exactly how he told us. One thing is don’t put the vanilla essence. I tasted before the vanilla essence and it was so good without it. And the plastic wrap part you don’t need to do, because when it cools down on it’s own, it forms a layer anyways. I loved this way of doing it because it’s faster than I normally make it.
I made this recipe using: coconut milk, unsweetened almond milk, coconut oil, Thai purple sticky rice, coconut nectar, pink Himalayan sea salt and an egg yoke. Came out a superb lavender colored rice puddin'. Thanks for the recipe idea.

Made it today, but i used basmati rice instead of arborio. Also, i didnt have that five spices thing. So i skipped it. Turned out amazing anyway. My whole family loved it. You are the best chef John 😄

I make this the way my Polish grandmother did. Par cooking the rice, adding the milk and sugar, cook till tender, add the egg yolks ( tempered) till thick and then taking the whites and whipping them to meringue and spread on the hot rice mixture in a bowl dusted with cinnamon. Different cooking methods but same result.
