They're likely not the only Legends that exist, but the ones who participate regularly. Most participants in Apex matches are thugs, mercenaries, nobodies etc. trying to make it big, though those guys aren't represented in trailers or gameplay and are only in the text lore Stories from the Outlands should be completely canon barring the occasional mistake. Launch Trailers are mostly canon, but according to the writers, action scenes with deaths shouldn't be taken too seriously lore-wise as they're for the sake of the trailer, so stuff like getting disintegrated didn't actually happen quite that way. In-universe you cannot be respawned from true death, but most participants aren't trying to 100% kill their enemies as it's not necessary. Taking the enemy out of the fight is enough, if they go unconscious from their gunshot wounds or from getting bonked in the head for example, then that's a "kill" in the Apex rules. They'll likely be healed with the powerful sci-fi medical tech and don't actually die for real, as in the brain doesn't die even if, say, the heart stops for a moment. But if you get your head blown off by a .50cal rifle you're a goner for sure! Some Legends especially go out of their way to not kill: according to the lore book Pathfinder has not permanently killed anybody in the games, while conversely Revenant and Caustic leave trails of bodybags in their wake (filled by those nobodies I mentioned earlier)

might of been answered in the comments below already, but techincally how they respawn, is if you watched season 5's trailer again, Loba tries to kill revenant by hacking into the core. basically, in the apex games, and i dont know how this works exactly, but when they die, they take another one of them (like we saw in the Loba cinematic with revenant) and put the soul in that one???????? i dont really know about this part of it at all but its SOMETHING to do with that i dont really know. also the core that loba hacked into, if that is destroyed, then if they die they are gone for good
That's literally only for revenant. The other characters come back via respawn chambers, essentially sci-fi magic medicine. They're all tough cookies and never actually die in the fights. The respawn chambers can't literally bring somebody back from the dead, just from near death.
So for context about the beasts the Apex Games take places in completely different planets and solar systems so that's why there are so many weird creatures

Yeah, canonically speaking only 3 of the actual legends we see play per match, and none of them have ever lost. The matches are filled with a bunch of other people that aren't story important.
