- The week of Thanksgiving, this small store is making a colossal 15,000 pies - that’s almost 90 pies an hour! The master baker behind this serious operation is Petra Paredez, and it’s safe to say, pie runs through her veins.
Growing up in her parents’ bakery in Virginia, Petra spent more time elbow deep in flour and butter than on the playground, soaking in the secrets of the pie game. After moving to New York, Petra met her husband on a first date and they immediately started planning a pie bakery together. Today, Petee’s Pie Company is a New York favorite, so there’s no surprise she’s earned herself the title ‘Absolute Best Pie in NYC’.

Definitely pecan but when my dad was still with us he had a secret source for sweet potato pie that was amazing.
Grandma's recipe for strawberry rhubard, and Dad's chocolate pecan tart. Either of those with a dash of homemade vanilla whipped cream and a coffee on the side? Perfection.
Love pumpkin and a very berry pie!
It would just be amazing...I would like a pie which has some crust...a small crush to accompany the filling...which shouldn't be too sweet...but sweet enough...with a nice texture❤

What I find so enjoyable about this video is Petra’s child like fascination with pies. You can't help but tell she loves her craft! It’s no wonder that people fortunate live in her area love her pies.
I ate there when I worked in NYC on the weekends! They have a great chocolate pie that is to die for. Glad they're getting some love on GBS!
Seems like a wasted opportunity that they talked about the Nesselrode pie, how it virtually disappeared from NYC and then..... nothing. They didn't talk about it, whats in it, or tried it. Bummer.
Yeah, I wondered about that, too. Why even bring it up if they're not going to explain what it is?

A little research indicates that it's a fluffy custard-based pie, with pureed chestnuts, candied fruit, and traditionally rum or brandy (which the home baking version of the Petee's recipe omits).
@@myladycasagrande863that sounds so good I may have to make the trip to Brooklyn and get some of Petee’s 😭
@@myladycasagrande863maybe when North American Chestnuts went extinct many of its recipes went with it, as I don't think it was immediate that the importation of Asian chestnuts as a replacement began. Also the Asian variety we use today historically was considered inferior for many recipes, I believe because of the water content.
Can confirm Petee's is quite good. There's one in Brooklyn and Manhattan. I like their various berry pies specifically the ones with crumbs.
Petee’s has been my go-to pie shop (both locations) for almost a decade now. During the warm season I love stopping by the shop to grab a slice a la mode, and during chilly season I bring their pies to all my holiday get togethers (I get requests to “not forget to bring a pie from that spot you brought from last year” lol). My non-pie friends tell me this is “the only acceptable pie” they’ll actually enjoy. I’ve tried many pie shops throughout NYC, and Petee’s is still top of my list. Their crust is CRACK. So happy to see them featured on one of my favorite YT channels!

We have that pumpkin "pie" she mentioned. A custard made from duck's eggs called "sang kaya fuk thong" steamed inside of a pumpkin's shell. ฟักทอง fukthong is pumpkin in Thai.
Pumpkin pie *_must_* include a rich, homemade whipped cream topping!
Or a rich vanilla custard ice cream. Butterscotch and butter pecan work well too.

How did you manage to find so many people who know nothing about preparing food or baking to test your pies? Have they never been in a kitchen? Would they recognize an oven if it accosted them? I'm genuinely impressed!

Sweet potato pie is the "quintessential pie" for..uh....many of the darker folks. But since Petee's has sweet potato too, kudos to Petee. She's the best. Oh, she also has classic cornmeal vinegar chess, pecan, and coconut custard. Covers all the southern favs.
Don’t worry, you can say black people. As long as you are saying it without a mocking or patronizing tone, I think most people are would be fine (as long it is not a slur, of course!)

I only had pie once - McDonald’s apple pie - and it had TOOOO much cinnamon and was way too sweet, now I am really craving a _good_ pie after watching this video.
I highly suggest trying to make your own! There are a lot of good recipes online and they’re all fairly simple :)
