My mother use to have someone make her a coconut cake and it was the absolute BEST. The frosting is what made that cake and I have not had one like it since. That cake was a 10. I made yours today and it is a 9.8!! Outstanding. I was nervous about the frosting and wondered if I should add the sugar mixture to the egg whites hot but I did SLOWLY and I had to whip it for like 10 minutes after adding but it turned out wonderful!!!. I was not sure about it's stability out on the counter so I put it in the fridge after taking a bite and OH MY GOODNESS!!!!! Thank you thank you thank you!!

I usually serve that cake while it is warm. But, I always put in the refrigerator because of the fresh frozen coconut. Keep it air tight, and it will keep real good. If you want to nuke it later in the microwave for a few seconds works great. Enjoy!

Boil your sugar and water until when you let it drip from the spoon you’ll see a strand sort of fly away. Or if you have a candy thermometer, 238-240 degrees. Add slowly to egg 5 egg whites you’ve already beaten

Low Country Cherry Squares Line a 9 x 13" baking dish with whole graham crackers, breaking them to fit, if necessary. In a saucepan, combine together over low heat: 3/4 C. butter (1 1/2 sticks) 1 C. sugar 1/2 C. milk 1 egg, well beaten When combine; slowly bring to a boil; stirring constantly. Remove from heat, and add: 1 C. nuts, finely chopped 1 C. coconut 1 C. graham cracker crumbs 10 oz. maraschino cherries, drained, dried, and finely chopped 1 T. vanilla extract (you can use 1 1/2 tsp. vanilla and 1 1/2 tsp. almond extract, if desired) Mix well; spread over graham crackers in prepared baking dish. Cover with additional layer of whole graham crackers, breaking them to fit, if necessary. Topping 1/4 C. butter, softened (1/2 stick) 2 C. confectioner's sugar 3 T. milk 1 tsp. vanilla extract Mix together; pour over top. Chill for several hours, before cutting.

Make sure you beat it for a few minutes to incorporate and it will get fluffier. ❤️
