I remember my mom used to make it when we were kids. Now it is my turn. Thanks for the very informative video as always. I never make an Indian food recipe without referencing one of yours Sanjay.

Yes. As long as the yogurt has not been pasteurized & has LIVE culture it is suitable as a starter. It does not matter if it is flavored as the flavor becomes very diluted. U can use the yogurt made to make ur next yogurt. I "pot set" my yogurt. I use an unopened pot to make the next one, then consume that so I always have 1 opened & 1 unopened pot in the fridge.

THANK YOU even though this video is older it has a lot of very useful information that most yogurt videos do not explain. I've been making yogurt for years but have only just now realized that the quality of the starter and the milk change the flavor and to learn that you can use chillis to create the starter was amazing... I'm now curious as to what plants are used in different cultures to create the starter!!!

Thanks for these tips. There are plenty of videos showing the whole process, but this provides some useful further explanation.
I've noticed that Indian cooks boil the milk, whereas others heat it just shy of boiling. Does boiling (as opposed to holding it at ~180 F) alter the end product?

    hi chef
I heard using an refrigerated curd is unhealthy as the live bacteria that's forms these curds would start dying when they are brought to room temperature. so,
are there any other method to prevent curd getting sour ? apart from refrigerating it ?
