INGREDIENT:
Cake part
Egg 2pcs
Cream Cheese 160g
Unsalted Butter 50g
Milk 120g
Whipping Cream 50g
(can replace by milk)
Cake Flour 40g
Corn Starch 30g
Rare Sugar 50g
blue berry part
Blueberry 100g
Water 70g
Lemon Juice 7g
Rare Sugar 30g
Gelatin 3g
Step
1. Put cream cheese, unsalted butter, milk and whipping cream together, and melted by hot water.
2. Add egg yolk to step (1), mix well.
3. Sift in the cake flour and corn starch into step (2), mix well, keep warm, set aside.
4. whip the egg whites, add rare sugar, and whip until soft peak.
5. Put 1/3 of step (4) into step (3), stir well.
6. Pour step (5) back into step (4), stir gently.
7. Pour into molds, and place the molds in a plate with hot water.
8. Preheat the oven at 120 degrees and bake for 90 minutes.
9. Remove the cake, let it cool, and cut a groove in the top.
10. Mix blueberries, water, rare sugar, and lemon juice, and make blueberry paste by low heat.
11. Add gelatin powder, stir well, and let cool to room temperature.
12. Pour step (11) slowly into the cake groove of step (9).
13. Refrigerate for 1 hour and serve.
