無鹽黃油50克(軟化)(4大勺)
細砂糖40克 (2大勺+2小勺)
蛋黃1個
中筋麵粉65克(或低筋麵粉)(1/2杯+1小勺)
奶粉15克(2大勺)
(可以用5克麵粉替換)
泡打粉1克 (1/4小勺)
小蘇打1克 (1/4 小勺)
烘烤:
烤箱預熱15分鐘
180°C(或370°F)
20~22分鐘

Yolk ✖️1
All-purpose flour 65g(or cake flour ) (1/2 cup+1 tsp)
Milk powder 15g (2tbsp)
(can be replaced with 5g flour)
Baking powder 1g (1/4 tbsp)
Baking soda 1g (1/4 tbsp)
Bake:
Preheat the oven for 15 minutes
180°C(or 370°F)

Hello, thank you for liking my recipe! ❤️❤️For the dough, it’s suggested to use light-tasted oil to substitute butter, therefore olive oil is not suggested. 菠蘿皮油性遇到天氣熱會比較容易軟,您可以嘗試提前做好菠蘿皮,密封好放入冰箱多冷藏一下,20分鐘到半小時左右會效果更好些,如果時間太緊也可以冷凍10分鐘,取出來現做現包,這樣也好的。

您好,是的,我是另打了一顆雞蛋來刷面。也可以在麵團的全蛋蛋液裡留下20克來刷面,留下刷面的20克蛋液用15克牛奶替換。😘❤️

您好,麵團可以分小一些份量的,烘烤可能會需要縮短幾分鐘,溫度可以一樣或著降低5°C這樣,每家烤箱脾氣不同,最主要看麵包皮色來決定。皮色淺棕色就比較合適。🥰💕

您好,蘇打粉可以讓酥皮遇熱後膨脹,如果沒有也可以省略,酥皮也會酥脆的,但酥皮膨脹裂開花口沒有那麼大
