  • This week we are sharing the Recipe for Chef Sha’s favorite dish in the world! We are making Mauritian Fried Noodles, MINE FRIRE or also called MINE FRITE.
    While the process is so simple, the flavors are perfectly balanced and you will never want to eat other Fried Noodles ever again.

    MINE FRIRE/MINE FRITE
    Prep time: 45 min
    Cooking time: 30min
    Ingredients for 4 portions:
    1 lbs. Chow Mein Noodles (or fresh Noodles)
    Canola Oil
    3 Carrots
    1 Cabbage
    A handful Garlic stems
    1 Bell pepper (optional)
    1 Bunch Enoki Mushrooms (optional)
    4 Eggs
    4 pinches MSG
    Salt and Pepper
    300g of Shrimp
    400g of Beef Tenderloin
    4 tsp Fish Sauce
    4 dashes Cooking Wine
    2 tsp Oyster Sauce
    2tbs Dark soy Sauce
    Ingredients for Garlic Sauce:
    6g Salt
    5g Chili Flakes
    1 Head of garlic
    12g Brown Sugar
    100ml White Vinegar
    100ml Water
    Equipment and Tools:
    Big pot
    Strainer
    Chopping board
    Small and big knife
    Mandoline slicer (find link above)
    Medium pan
    Big or Wok pan
    Chop Sticks
    Blender
    Instructions:
    1. Bring a big pot to a boil and steam the Noodles until they are Al Dente. Strain them, rinse with cold water and then let them drain.
    2. Prepare and chop the Vegetables and Proteins following video instructions for best results.
    3. Marinade the Shrimps with Salt and Pepper.
    4. Drizzle some Canola Oil over the drained Noodles.
    5. Whisk the Eggs while adding Salt and Pepper.
    6. Heat up a pan. Then cook the Eggs in a Crepe like way (approx. 3 tsp per portion). Once set, remove the Egg Crepes onto a Chopping board and cut them up in long stripes.
    7. Chef Sha’s Top Tip: Combine Vinegar, Brown sugar, Salt, Chili Flakes and peeled garlic in a blender and let mix until it becomes a smooth, juice like consistency.
    8. Heat up a big pan and add Canola Oil. You will be stir frying the Mine Frire by portions.
    9. Start by cooking the Beef, add in the Shrimps and let everything cook through. Then push to the sides of the pan and add a handful of the Cabbage.
    10. Let the Cabbage brown and become translucent. Then push to the sides and add the Carrots. Let them brown and then mix everything. Add the Garlic stems.
    11. Turn the heat to medium and add the Noodles in the middle.
    12. To season, add Pepper, MSG, Dark soy Sauce, Oyster Sauce and Fish Sauce and mix into the Noodles.
    13. Char the Noodles and then mix everything in the pan. To unstick, add a splash of Cooking wine.
    14. Assemble everything together following video instructions. VOILÀ!! ENJOY!!

    Can the cooking wine be omitted or any substitute?

    Your recipe looks nice even a little long cooking to me for one. But the garlic sauce looks like ''milk shake'' or ''coconut milk''. Never ate that kind of garlic sauce before. Anyway good luck.
