I am a Bong and we are eternal fish lovers. What is surprising in this preparation which is they did not fry the fish after marinating and putting the raw fish in the gravy. In Bengal, we always fry the fish after marinating it for some and time, and only then we add the fried fishes in the gravy to make any type of fish curry.

Once you fry the fish marinted with Masala, it gets sealed. When you make curry with that fried fish gravy will not get any extracts from fish muscle.
Bengal cuisine traditionally fries (lightly though) even vegetables before cooking curries.
