The same thing, but Chicago dog style.
Green soft serve ice cream for the pickle/relish and makes it easier to eat than scoops. Probably keep it vanilla.
Candied (the fresh/fancy kind, not that garbage candy in a bag) or fresh oranges/grapefruit for the tomato. Makes it not so one note and pure sugar sweet. Adds freshness.
Diced coconut or coconut jellies for the onion. Adds another layer of texture and also, more flavor.
Candied or fresh key limes for the sport peppers, same deal as the oranges.
Caramel for mustard.
Celery salt would be replaced with a spice of some kind, maybe a small shake of cinnamon/nutmeg/cocoa powder.
As for the poppyseed bun, idk, tbh. Could maybe go for poppyseed still, like a lemon poppyseed cake.
I thought about this way too hard but the execution of the one on this video was just so...idk, terrible? Just sweet for sweetness sake.
