Never in my life in a campaign battle. You slaughter as many of them as you can that way they can't ever regroup. The only exception is when the ransom is really high or you're trying to peace out and can make a couple extra florins from it.

when using crossbowmen its best to stretch them out in 2 row deep lines this maximize the amount of low trajectory bolts increasing maximum effectiveness. At least with regular bow archers you can get away with deeper formations as bow archers are more accurate with their arching shoots

I sometimes so scenarios like in Grand Campaign I took Spain and likely changed the whole nation to Rhodes and Nicosia And Crete, I sometimes do like that I want to kill my unuseful general so I took it to face a 20 unit army (Spearmen 'n other militia) then I accidentally took my king (lol) but I won that battle
