How to make lollipops at home

  • This is a easy and simple way to make lollipops. Today I’m making cinnamon and boy is it strong! And yes I know I added the flavoring too early. I got distracted and wasn’t thinking. 🤷🏻‍♀️
    INGREDIENTS
    2 cups granulated sugar
    2/3 cup light corn syrup
    3/4 cup water
    1 dram (1 teaspoon)* LorAnn super-strength flavoring, any flavor
    LorAnn liquid food coloring or gel food coloring (as desired)
    Hard candy molds (optional)
    Powdered sugar (optional)
    Sucker bags & twist ties (optional)
    Use of a candy thermometer is recommended
    *Please note that our Cinnamon, Clove and Peppermint flavors are particularly potent. You may wish to reduce the amount used for these flavors.
    DIRECTIONS
    Have all ingredients and tools assembled and within easy reach of the stove. The use of metal spoons and measuring utensils is recommended. Line a cookie sheet/jelly roll pan with foil and lightly oil or spray with non-stick cooking spray (such as PAM). If using molds, lightly spray cavities of clean, dry candy molds with non-stick cooking spray. Insert sucker sticks. If using molds, you may also want to spray a piece of aluminum foil with cooking spray. If after pouring the syrup into the molds you have excess candy, you can pour it onto the foil for break-up candy.
    In a heavy (good quality) 2-quart saucepan, mix together sugar, corn syrup and water. Stir over medium heat until sugar dissolves.
    Insert candy thermometer if using, making certain it does not touch the bottom of the pan. Bring mixture to a boil without stirring.
    Early in the cooking process, "wash down" any sugar crystals that form on the sides of the pan with a wet pastry brush.
    Continue to cook the syrup, without stirring, until the temperature reaches 260º F; add drops of coloring until desired hue is achieved. Do not stir; boiling action will incorporate color into syrup.
    Remove from heat precisely at 300° F (temperature will continue rising), or until drops of syrup form hard, brittle threads in cold water (hard crack stage). After boiling action has ceased, add flavor and stir. USE CAUTION WHEN ADDING FLAVORING TO AVOID RISING STEAM.
    Carefully pour syrup into prepared molds or onto the prepared greased and foil lined cookie sheet. (As the sugar mixture begins to set up, you may want to score with a large knife to mark squares.) Do not refrigerate.
    Cool completely. Break sheet candy into small pieces and dust with powdered sugar, if desired. Store in airtight containers between waxed paper. If making lollipops, do not dust with powdered sugar, but place in sucker bags and secure with twist ties. Store hard candy in a cool, dry place. Do not refrigerate.
    *Another alternative is to pour the hot candy onto a heat-resistant surface covered in powdered sugar. When the candy is slightly cooled, it can be cut with well-oiled scissors into pillow-shaped pieces (you may want to wear heat-resistant gloves, such as rubber, to protect hands from heat).

    Tip: if you don’t have flavor, you can replace some of the corn syrup with maple syrup to make maple flavor.
    (Edit) if you put too much in it won’t taste very good, and it will get more sticky the more maple syrup there is.

    Reduced juice works well for flavoring and is healthier than the artificial flavors. I am making these as we speak. I've used juice to make sour lemon/grape, orange/pineapple and I'm making sour white grape right now and honey crisp apple. I have used extract though and I make cake batter flavor with that. I only use one cup of sugar though. I found 2 cups made it much too sweet.

      I have a separate kitchen for making my candies and baked goods. And this was during the day while they were at school when I filmed this. 😊

    If you do this a lot, might want to consider a metal pour spout pitcher. A long nosed one. Might make life easier.

    Cinnamon: DEFINITELY reduce the amount slightly and then coating with a thin layer of powdered sugar while still hot helps a LOT!

      I found your video TRYING to find a decent recipe for old fashioned Barley Pops. My uncle just turned 93 and we had a long talk about these delicious barley pops shaped like lobsters that both he got as a child, as did I. I found some online, but they tasted nothing like the ones we used to get in Boston. I’ve seen others asking about them and came across 2 recipes-neither of which worked at all. I’ve got a friend in China who says barley sugar pops are popular there-in some areas, and is trying to hunt a recipe down for me. If you know of any, please let us know!

    Is it possible to use a ladle instead of pouring from a pan? I can see myself pouring it everywhere but the mold.

      I think that would work! Just be real careful it doesn’t spill on you as you do it since it’ll probably be really sticky as it’s cooling.

      It depends on how strong you want the flavor. It doesn’t take much.

      Apply a thin layer of corn syrup to the lollipop to make it sticky and give the wafer paper something to grab onto. Don't use water for this because it can melt the paper.

      To replace light corn syrup, substitute equal parts honey or "golden syrup," which is another processed sweetener made from cane sugar.

      @@coldmountainmomma One cup is 250g, so a kilo of sugar is four cups. So it's four cups of sugar and one and one third cup syrup.

      It varies. I would say check them in 20-30 minutes. Make sure they are cooled before taking them out.

      Those were cotton gloves but I recommend getting heat resistant gloves. I could still feel the heat.

      I use gel food coloring. It seems to work best. I don’t think it has oil in it.

      Humidity plays a big part too. If it’s real humid, they won’t turn out. I let the sit until they are cool to touch.

      Yes they are supposed to turn hard. Humidity and not cooking long enough can cause them to be soft and sticky

      Try cooking it faster, the longer it takes to come to temp, the more chances of a yellowing color. Make sure your thermometer is accurate too.

      Sounds like the temp didn’t reach 300 F. That’s the hard ball stage. When the candy is cooking, you can take some of the candy and drop some in a glass of water. Let it sit for a minute bc it is hot. Take the candy out. If the candy forms a hard ball, then it’s ready. If it’s still soft, it’s not ready.

    How to avoid them from being sticky? I brought it to the correct temp and they hardened(like..it's hard from the inside and even outside)..it's just that they stick to the fingers a lil and I can't put them in wrappers because of that..
    Is it because of the humidity? It's around 27-30° C where I live

      If it’s humid, they will be sticky. You can rub some powdered sugar on them to help with that

      It usually doesn’t take very long. Maybe 30 minutes to an hour. If it’s still gooey, it may of not got up to temp.

      It really depends on the flavor. Cinnamon, peppermint etc maybe 3-4 drops. But other flavors like fruity flavors I would use the whole dram.

    It was seemingly not getting to 300 so I turned it to high heat when I got close to 300 it was smoking an my fire alarm went off I pour it in the molds it was the foulest most burnt lolipop known to man

      It’s ok hopefully my next batch will be nice like yours .. at first I thought it was the thermometer but after some thinking belive I didn’t actually dissolved the sugar not thinking it was important an heated it up to fast an rushed it which made the sugar burn up rather then bringing up the temperature
