    A few days ago I had some leftover fries, so I crisped them up, put on some cheese, some bone meat from some pho I made at home, a spicy thousand island fry sauce, some onion, cabbage, and scallions. Best fries ever.

    I use leftover fries to make hashbrowns: mix cornstarch and water to make enough slurry to cover the fries, season with salt and pepper if desired, cut them into small pieces (I go for cubes) and cover/soak in the slurry (add paprika for a kick), fry in plenty of oil. Very good with eggs or added to a breakfast burrito!

    Frittata is definitely the Italian fried rice. Uses up the leftover veggies, but tastes delicious if well done, so no one minds. Never tried french fries in mine, but next time maybe I'll give it a try.

    I always thought of frittata as just an inferior quiche but seeing that slightly custardy slice of eggs and filling has changed my mind. I also love how easy it looks to make in a 10 inch cast-iron.

    I don't know why in the US there's this misconception of frittata being cooked in the oven... frittata letterally comes from "fritto", which is italian for "fried"

    I love frittata - I’ve been making it since the 90’s. My favourite has baby spinach, par boiled potato, onion, garlic and fresh basil. And I also make a sandwich with leftover frittata- it works so well with bread ❤️

    I might actually steal that frittata recipe, it looks delicious. Although funny enough, I’ve never had a frittata before.
    That said, my main question is where you got those fries in the first place. They kinda look like Whataburger fries, but I’m pretty sure Whataburger isn’t a thing in New York.

    This video has really really good ideas! Often if I have them at home there's always too much, and at dinner, the fries are cold and greasy, yet if refried they'd be too dry and hard. Looks like the solution was to just let it go "soggy" and revert to potatoes.

    Frittatas are the BEST for leftover! Never heard of "frittata di pasta"? Yes. It's a frittata made with leftover cooked pasta (anykind). DELICIOUS!

    My favorite thing to do with leftover fries is like a hash. I’ll fry them like home fries with onions in a pan and then add some eggs it’s really good really easy and a great way to use them up without a ton of extra ingredients or work. The okonomiyaki looks delicious though!

      When I was little I thought that people who said Batatas in the market had an speech impediment, because my mom never bought them 😅🤦🏻‍♀️ so I didn't know they were a different thing than potatoes 😇

    Ok, I'm trying that soup this week!
    I've been staring at the prime-rib in my fridge for almost a week trying to decide what to do with it, but after I deal with that, potato soup!
    Regarding the okonomiyaki spin-off: It reminds me of a hash I had made in my college days - with onions, potato, cabbage and corned beef. A friend of my roommate asked what I was making and I called it a stir-fry - their response "Is that potato? Haha! What kind of stir-fry is that!?"
    My response: An Irish stirfry (not knowing he was a chest-thumping 5th generation American-Irish)! Hooboy, that got some laughs and facepalms =D

    I had heaps of hot chips leftover from fish n chips, so the next day I chopped them up into little cubes, and mashed them up with some milk into a kind of mashed potato consistency with yummy crispy bits. I put that on top of leftover pasta in a baking dish, grated over some cheese, and baked it into a delicious shepherd's pie -esque baked pasta! It was super crispy and delicious. I was surprised at how good it was! Turned two leftover meals into a complete new meal!

    I just made the egg, chips and turkey quiche thingie! I had leftover chips and I didn’t know what to do with it! That tasted good and I didn’t need to put it in the oven nor I added any cheese. I used the left of a shredded cheddar bag. It was tasty. Just remember to season it.

    I turn them into loaded fries, but instead of dry, I sauté them in a homemade sauce. Then after most of the fries are coated & crisp a bit from butter & the homemade sauce. Add whatever topping & cheese. Just cheese alone is delicious. I call them drunken fries.

      @@priyasiva2983 there’s a few creative ways to make loaded fries. You can experiment & customize ur own. Understand they will become somewhat “soggy” like because they’ll be absorbing the sauces. So with left over fries, you can sauté them in some unsalted butter in a pan to crisp them up & add buttery flavor. Then with some kind of sauce, u can sauté the fries with a bit of any sauce you like just enough to coat them.
      Or you can sauté the fries in butter, then toss the fries into a large mixing bowl & add some sauce into the bowl to mix instead. Right away, add any kind of melty cheese & more sauce to your liking.
      If you can handle spice, add some pickled jalepeno, garnish with dried parsley, and enjoy! After I finished sautéing my fries in butter, then sauce in the same pan. I turned off the heat, add generous amounts of cheese, then cover with a lid, and set it to the side. Then serve with some more sauce.
      The sauce I made at home was a fresh tomato & lime like sauce. I used fresh tomatoes, diced them into tiny cubes, sauté in butter until softened & crushed, add salt, black pepper, bit of chicken buillion, little bit of sugar to balance acidity, (preference) ground sage, bit of dried basil or parsley, add lime juice. Season to your liking!

    When I was in albania I had gyros and they literally just make a gyro and stuff it with fries. It's so good and the ingredients for gyros are simple with a lot of room to substitute leftovers.

    Easiest thing to make w/ leftover fries is w/ gravy, cheese curds, and a chicken patty. Top w/ green onion and pickled red onions or kimchi. U can substitute the gravy for butterchicken sauce or spaghetti sauce and mozzarella

    I wonder if the oily nature of fries incorporated more oil into the dishes and if that was accounted for at all? I imagine it's no more than adding like a tablespoon of oil, but that's still enough to mess with things if not accounted for properly

    i often chop them up and use them instead of potatoes in an indian style curry. Once they are stewing for a while, they just turn into potatoes again (albeit greasier - which is ok in curry) - similar to the shakshuka. Or i fry them crispy in a pan and use them as fries XD

    As stale french fries are often tossed I love the creativity of those recipes, especially the soup. ♥️
    I would also be interested if you could turn them into a dip somehow. There's a Greek garlic-potato cream that comes to my mind. Caramelizing them with some spice might also be a nice idea.
    I also highly recommend brinjal (eggplant) pickle as a sandwich condiment, especially with egg/omelet etc.
