- This week Casey is in Wyoming hunting pronghorn antelope. The catch...he only has 24 hours to do it. Wyoming is known for its abundance of pronghorn throughout the state and for the various opportunities to hunt them during the fall. What isn't as well known is just how fantastic this wild game meat is to eat. Easily one of the most underrated species we hunt each year. Pronghorn hunting is also a great way for non-resident hunters to get their first taste of DIY western hunting.

What a great speed goat 🐐. I have wanted to hunt pronghorn for 5 years or so. Hopefully 🙏 by God’s Grace and Mercy I will be able to actually go in 2023. I want to do a combo hunt with mule deer 🦌 as well. I have 4 points for both species right now.
I know that dead is dead, but my favorite or the Weatherby cartridge that I would love to have and use for pronghorn is the 257 Weatherby Mag aka the Death Ray.
You should do a catch and cook for those, I have had so many tell me don't waste your time they are terrible to eat, then I have had 1 or 2 old timers say they are the best eating but you have to cut them up fast and cool them fast. What's the best way to get good meat from them??? Nice shot Casey!

Good thing ya had the bugle tube on the antelope hunt...haha great hunt and content still. Also not the same goat...not even close.. the one you missed was a solid 78-79" goat with decent prongs but the one you shot is more like a 70". Everyone wants to shoot an 80" goat but you gave yourself a day to hunt and glassing from roads isn't going to produce that caliber of buck. That's just not a realistic expectation unless you're paying the big $$$$ for guided hunts on B&C leases.

I have always heard pronghorn is super tough meat. How do you cook it? Marinade it in a tenderizer for 48hrs? What details on the animal are you looking for when trying to spot a big goat?
Antelope is not tough, rarely can it not be cut with just a fork. Proper care begins with the shot placement, lung/vitals shot is the best. If you gut shoot it, well, you get what you deserve which will be gamey/off tasting meat. Second most important is to get it field dressed immediately and get the carcass cooling as quickly as possible. Third, get the animal where it can be hung and get the hide off, I am absolutely anal about this part. Once I have the hide off I wash the entire carcass inside and out (my well water is probably 45 degrees) to get any hair and blood and loose scraps of fat/meat off the carcass and then I let them hang for sometimes up tp 15 days depending on the ambient temperatures. This is where your flavor and tenderness comes in, the longer it hangs the better it will be. You have to be as anal about the butchering process as you are with every step up to this point, get your steaks and roasts cut into the portions you want, cut out and clean any bloodshot meat, get rid of ALL the silver skin and if you hung it long enough get the crust off the outer layer and you will be left with the absolute best meat. You are only going to get about 35 lbs of meat off a good buck to put in the freezer. I never marinate antelope, I want to taste antelope, not marinade. I simply mix salt and pepper (or your dry seasoning of choice) with flour and lightly coat my steaks and put them in a hot cast iron pan with oil or butter. Fry it for about 2 minutes per side and eat it. I have served it to guests that have argued with me that they were eating antelope. Roasts I will do just like a beef pot roast, veggies and meat all in the pot and put it in the oven until done.
Judging an antelope on the hoof can be difficult, probably the hardest North American big game animal to judge. The difference between a good buck and a great buck can be a matter of inches. I've shot 16-17" bucks that have scored in the high 60's and I have also taken 12-13" bucks that topped 80". With goats its all about the mass and how far up the horn they carry the mass. Generally speaking you are looking for a buck that has cutters that are above the tips of his ears and has as much horn length above the cutter as he does below the cutter, that will be a mid 70's buck, now factor in mass and that's what takes you from just a run of the mill 70 incher to something well over 80".
Source? I've put well over 100 goats through my freezer over the years of hunting with my wife and kids. It is my favorite animal to hunt and eat.

It's easy when you have connections that do all the legwork ahead of time and then just invite you out to shoot something.

The Pronghorn (Antilocapra americana) is a medium-sized even-toed hoofed mammal native to North America, it is the only extant species in its genus and the family Antilocapridae, its closest living relatives are the giraffes (genus Giraffa) and the okapi (Okapia johnstoni), which both are included within the family Giraffidae, both families belong to the broader superfamily Giraffoidea, Giraffoidea is a unique and ancient superfamily of pecorans, it is the most basal extant superfamily of pecorans, the pronghorn has five recognized subspecies: the Rocky Mountain Pronghorn (Antilocapra americana americana), the Oregon Pronghorn (Antilocapra americana oregona), the Sonoran Pronghorn (Antilocapra americana sonoriensis), the Mexican Pronghorn (Antilocapra americana mexicana), and the Baja California Pronghorn (Antilocapra americana peninsularis).
