Luigi Boccherini îs probably the most sentimental Baroque composer and The most sophisticated at the melodic lines of the strings.
By the way, Boccherini was a classical composer.
Luigi Boccherini (1743-1805) was a composer of the Classical era, which is later than Baroque music (from about 1600 to 1750). I find his music charmingly expressive, and sometimes passionate perhaps due to Spanish influences. I am not sure he's "sentimental" - a word often used to criticize a work or performance that's exaggerated in a self-indulgent way.
He was a classical era composer , but his courtly style and melodies often invoke an Italian baroque flavor, at least to my ear.

Though the very first record I bought (long ago) included Boccherini's very popular Minuet (I fell in love with the music immediately), I only get to know his other works not so long ago (via CZcams). That's due to concerts I went to did not programme his music. Boccherini makes me feel happy - I now keep listening to his music again and again, just like long ago I couldn't stop playing the Minute again and again (the record, as well as its piano version).

Boccherini wrote the first masterpieces among string quintets. Most of them were written for a quintet with two cellos since in his remote and isolated working place he had a string quartet with him and he could play the additional cello. He was wide enough not to make this cello a dominant line in the quintet.
Boccherini's very popular Minuet was the first recording of Classical music that I heard (the very first time I was allowed to buy a record - long long ago). I loved it so much that I couldn't stop listening to it. I always thought it was a quartet until I looked up the score. Like you said, the two cellos do not dominate. I find the cello parts enhance the viola.

Boccherini himself was a virtuoso cellist, and whilst the cello does not dominate as you say, the availability of the second cello means you can have one dealing with the functional bass whilst the other is therefore freed to play a more obbligato role which is what often happens.
