I had heard much about this very special Ranebennur mutton preparation, the enne khara, translating literally to oil and chilli heat, drawing from its two principal ingredients. And so on our recent drive to Goa, we planned a lunch stop in this agricultural town in North Karnataka at Hotel Nartaki, the home of this iconic dish. Established 30 years ago by N Satish, a tailor turned restaurateur, in a tiny eatery that could only accommodate a few customers at a time. His wife would help him make the masala at home that he would cook into curries. Along the way, he came up with the concept of enne khaara largely to appease the spice-hungry tastebuds of the locals. The dish, in contrast to its fiery name, is a beautiful balance of flavours between the chilli heat (from a combination of 90% local Javannur chillies that also impart a striking colour to the dish, and 10% Guntur chillies) and the oil that rounds off all the sharp edges of the masala aided by the sourness of tomatoes. Mr N Satish has since passed on but the homemade tradition continues with his sons, Chetan and Chandan, in a much larger space today, aided by their mother and wives. If you love your meaty fare, Hotel Nartaki is certainly worth a visit, I would say even a detour should you be travelling in the area. I hope you enjoy this very special episode. North Karnataka has many unexplored cuisines and you can find best quality food within good affordable price and it's healthy as well. Usually meals here balances greens, veggies even in daily home food routine and of course 'ಜೋಳದ ರೊಟ್ಟಿ' (Jowar Rotti) which is staple food of Uttara Karnataka.

I was in Ranibennur for almost for 25 years & my father owned a fertilizer Shop named S.N. Traders. Mr Satish Nazare was my friend & his tailoring shop named Liberty Tailors was next-door. He started his first Nartaki hotel in a small place at Doddapete cross. This was in year 1985. Old sweet memories.
This is easily the best Indian food show on CZcams. Your no frill hosting is what makes this show so likeable.

Western Maharashtra and North Karnataka cuisine are distinctly similar right from bhakri (jowar roti) to those tasty mutton dishes. Especially the crushing of bhakari makes the meal much more tasty.

Hello Kripal. What you are doing is commendable service to those who enjoy good food. I think I have said that earlier too. With this episode, what strikes me is the plethora of eateries you visit across Karnataka. Ever since I began following your vlogs, I would mention the various types of cuisine that is available in the state to people who live in Bangalore. To Kannadigas too. But alas, many don't know the variety that is available be it South Karnataka or North Karnataka. Many do not even know the splendid eateries like Rameshwaram in the heart of the city or Brahmins Thatte idli or Veena Stores.
I do wish there was a forum which gave awards to people like you for doing phenomenal work in this space.

Really enjoyed the way the owner was so cautious with the amount of mutton being used as it's very rare when hotels think in the way of closing the mutton dishes once it is over... Chicken sukla with sappe and yenne khara was of different level waiting for next one
