Hercules Candy has been on Steveâs side of the family since 1910(ish). When he took over in the 70âs, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Double flip is just to remove the bottom paper when they tip it out of the pan. Second flip just to make it upright.

Adding to this, the cake looks bigger once they flip it because it's still hot and expanding. Since it no longer has paper to restrain it, it will expand a bit further (Not a ton, otherwise I assume would be undercooked)

The jiggly cake is a cake from a Taiwanese cake shop branch in Malaysia namely Original Cake. It's a castella cake. They have a few varieties, original, with cheese, chocolate and durian flavour. Unfortunately we no longer have the branches of this cake shop here. But theres few others selling almost identical
Now all I want to see is people trying a delicious looking cake and finding out it's Durian...lol

@@Ozhull It's got to be the difference between Western genes and Asian genes or something. I think durian has a strong smell, but not a bad smell, not like pig poo like none Asians describe it. On the flip side, as an Asian I can't do goat cheese, it smells like literal solid fart to me, but Westerners love it.
@@abmong Agree.. as someone who get's funny looks for my cuisine (Caribbean latino), Goat Cheese makes me gag by just smelling it from afar, taste rancid sour to me, and I will eat almost anything cheese related.
That jiggly sponge cake is extremely popular in Japan. They sell it by the block. They make plain and chocolate sponges, some use custard or chocolate, piped in from the sides. The double flip puts it back the right way up, just like when you turn out a cake at home. Also known as Castella cake.
When they questioned if it was cheese in the cake I was just like, these guys 100% know nothing about Japanese pps lol
As a professional cake baker, I double flip all the time, it's just to get it back the right way up after getting it out of the tin, and taking any parchment off. You crush the top if you leave it upside down. Whereas the crust formed around the tin is sturdier.
I think the video is Taiwanese fluffy sponge cake called Taiwanese Castella. Japanese has a fluffy Japanese cheese cake. The cooking process for both is similar. Japanese used cream cheese. Taiwanese sponge cake used flour. Also, Japan has Nagasaki Castella too. It has made in the 16th century, when the Portuguese reached Japan.

The Portuguese brought it to Japan, and the Japanese brought it to Taiwan. And then the Taiwanese brought it to Malaysia, where the video was made. You know a cake is pretty damn good, if everyone agrees it's a recipe they just have to pass along.

For reference: You'll find "vanity English" all over the place. English is often seen as "cool" or just different. Very common in marketing, or on T-shirts. In Asia, T-shirts with "English" on them often make as much sense as the T-shirts in the US with "Japanese" on them.
I can't fully identify the language used, but it's not Japanese. The characters themselves are definitely either Chinese or derived from Chinese. I'm about 90% sure that this is, in fact, a Chinese language.

LOL, the double flip is to take off the paper from the bottom, then the next flip is to put it on the bottom of the cake again. So they are cutting it from the top.
What you were witnessing is the making of a Japanese cake know as castella (in Japanese kasutera). It is a sponge cake know as wagashi ( A confection traditionally form Japan.)
Incorrect, this is a conventual portuguese variation of a Spanish sponge cake called by the Portuguese PĂŁo de hespanha/Castella, in Portugal is now called PĂŁo de LĂł. Is one of the many patisserie techniques introduce to Japan by the Portuguese in the 16th Century.
The jiggly cake is a Japanese thing. However Dancing bacon are Singaporean or from Malaysia so the box is in English & Chinese. Both countries speak multiple languages.

there are plenty of times when you bake lower than 350, it depends on what your making, generally the thicker/denser the baked good the lower the temp, there are exceptions as well certain cookies will be 325 and lots of bread are over 450, it comes down to how fast the inside vs outside need to cook as to not burn the outside or undercook the inside, im baking almost everyday, mostly breads but since i have kids i do birthday cakes and of course lots of cookies
Adam Ragusea has a pretty good video explaining how to make. There are plenty more vids like this that show the process but Adam's video is about making it at home and I think he was inspired by this vid. His vids are pretty good at explaining what could go wrong and he usually practices a few times before hand a lot to formulate a good recipe.

I have eaten Jiggly cake at dim sum in Asian restaurants it is made with a lot of egg, sugar and flour and the custard cream in the middle it is totally delicious. I have made ordinary Cakes with Jello crystals in it and cut back on the sugar and the cake is amazing. It doesn't have a crumb but really has loads of flavour and raises high. And you were right it was cheese.

ć€æ©ćłmeans flavors from old times in Taiwan. Many brands now have their chain stores overseas in many Asian countries. Itâs different from Japanese castella. This is more airy and fluffy and tastes good when itâs either hot or cold. Personally, I like it best when itâs just out of the oven.

Based on the female employees head scarfs this is either in Malaysia or Singapore. Both countries have a Muslim population, both have Chinese communities (the writing on the box is in Chinese not Japanese), and both speak English as well. Durian also grows very well in Singapore and Malaysia.

There are a ton of videos showing them making this-watch one of those and you will see what they add for ingredients. It's a type of what we call sponge cake, but it isn't featherweight like angle food, it's dense.
Love love love watching the bakeries in Japan, Korea, etc..they are always so clean and wear masks and gloves.

I made this cake 2 days ago. It's very delicate and tastes like vanilla flavored cloud. You'd have to melt the butter in milk on the stovetop first then pour the mixture in sifted flour. Egg yolks and egg whites need to be separated, whites need to be beaten to soft to medium peaks. But boy is the work worth is because this cake is super delicious.
This looks so good. I have tried to find this in the Sacramento area and was told I would need to go to San Francisco. It kidna looks like a cake/cheese cake. They flip it to put the top on top for presentation.
It was a popular dessert trend during the time. A very airy cake that was supposed to be based on a baked cheesecake. If you really want to see jiggle, you should look for fluffy Japanese pancakes.
I've made this cake before. It's Japan's version of cheesecake. You use cream cheese in making it and a lot of whipped egg whites. That's why it's so light and fluffy like meringue.

If you guys are in Syracuse, you have to try the Chinese restaurant Red Chili! They specialize in Szechuan region food. Try a dry pot, and the scallion pancakes, and the crispy cucumber with garlic appetizer, and the boiled fish in chili oil. Oh and the sesame noodles or the Dan Dan noodles. If youâre extra adventurous, you could try doing the hot pot!
There is nothing better than jiggly cake with coffee in the morning. Had it almost every day as an expat working in Indonesia. My favorite was vanilla. I also walked 4 miles each way to the office and worked off those calories.

8 oz cream cheese
4 tbsp unsalted butter
7 tbsp milk
6 eggs separated, at room temperature
1 1/2 tbsp lemon juice or 1 tsp lemon zest
2 tsp vanilla extract
3/4 cup granulated sugar, divided
3/4 cup cake flour
2 1/2 tbsp cornstarch
1/4 tsp salt
1/4 tsp cream of tartar
To decorate:
1/4 cup powdered sugar
1/2 cup fresh berries

If you watch them make it, itâs basically the same as Angel food cake. And yes, they put sliced cheese in some of them. Like American cheese.
More like a sponge than angel food cake. Angel food cake uses only egg white and this uses whole eggs.
