    First off...you’re a buttercream Guru! Second, I have a question regarding using shortening. Is the only reason for using the shortening in the red for making the roses? If I were to use this for layered cakes, would it work without shortening?

      Gloria Bass thank you. You’re too kind! Yes, the shortening is used when piping rises or if you live in a very hot/humid climate it helps with stability. It can be made with all butter.

      It can rest once decorated. You can leave at room temp for a short while but not too long because of the milk content. Once decorated it can rest in he refrigerator.

    Is the point of adding another color first to avoid the bitter flavor that black and red food coloring have when used in larger amounts? It still seems to me that overall, a lot of food coloring is needed to get the intense color.

    When making Rose's, wipe tip off before placing each petal if there is any buttercream hanging off of the piping tip!

      Why? Not something I ever feel the need to do. Each new petal covers the petal before. Nature is rustic and imperfect. But of course, if people wish to do that ... all good!

      @@CupcakeSavvysKitchen That's how I was taught in college and yes, to a certain extent roses are imperfect in nature but they do have a pattern in which they are to be placed and angled as you move further out from the center. Especially if you have excess at the wider end of the piping tip, then the rose is too thick at the base which also makes the furled look of the upper edge of the rose not look like a rose petal should. I really don't mean any offense and is how I was taught in college and is how you will find any professional cake decorator do as well and if you're putting out tutorials, you're teaching someone to do it, so you should make sure you are teaching them the correct way!

      @@danafidler8815 i believe that she’s not teaching the viewers on how to make roses, she’s showing how stable the buttercream is even if you pipe it as a rose. I’m sure she knows what you mean but this video is all about stability of the buttercream as an alternative to using icing sugar

      Yes, this method works for any type of buttercream. For the black, it will also work if you start with a buttercream made from chocolate or cocoa powder.

    So smooth as usual. Love your videos. But I have a question. Since am in Cameroon and we always have 30 degrees hot. And butter is very expensive like gold. Can I use margarine and is it going to be stable like this? Do you have the measurements for margarine? Can't afford to use butter

      Either works. Straight out of the fridge can be hard to whip at first. Do slightly soft or room temp is easier to whip.

      Shortening in the UK is known as Trex. In the US it is known mostky as Crisco.

      Iba yung lasa kapag pure shortening kaya masked by sugar or condensed milk as sweeter kung puro shortening and flavorings like vanilla or almond extract. Kaya siguro nag half and half sya ng butter at shortening
