My grandmother used to make what we called tomato potatoes. She would cook the potatoes in the sauce she made. I’ve never seen anyone else make that. Do you make something similar? That would be a great video! 😊
My Mom, whom I miss dearly along with my Gram, made this all the time, an absolute favorite of mine!!! Still make it today, especially during lent for a light dinner!! They called them eggs in purgatory.
I do this with Italian or Mexican herb stewed tomatoes in a can. Haven't sprinkled the cheese on it yet, but I like it with sliced avocado and, of course, some kind of bread like toasted sourdough, crusty French, or cibatta with all its nooks and crannies, yum!
