    In this video we go over how to make and use chocolate decorations. First we'll melt the chocolate, then make a variety of designs in three different ways, and then choose the best design to garnish our items.

    = Carrot Cake =
    - 1 cup (125g/4 oz) self-raising flour
    - 1 cup (125g/4 oz) plain flour
    - 2 teaspoons cinnamon
    - 1 teaspoon ginger
    - 1/2 teaspoon mixed spice
    - 1 teaspoon baking soda
    - 1 cup (250ml/8 fl oz) oil
    - 1 cup (185g/6 oz) soft brown sugar
    - 4 eggs
    - 1/2 cup (175g/5 2/3 oz) golden syrup
    - 2 1/2 cups (390g/12 1/2 oz) grated carrot
    - 1/2 cup (60g/2 oz) chopped walnuts
    Method:
    1. Sift the self-raising flour, plain flour, cinnamon, ginger, mixed spice and baking soda together.
    2. Whisk the oil, sugar, eggs and golden syrup together.
    3. Gradually whisk the liquid into the flours.
    4. Then add in the grated carrot and nuts.
    5. Stir together, pour into baking tins and bake at 180 degrees Celsius for approximately 45 minutes.
    Qty cream cheese icing to frost.

    Love the way its taught....thank you. Could u suggest on how to store these garnish items and what the proportion of chocolate used.

      You can store these in an airtight container at room temperature 😊. It's really hard to estimate the proportion of chocolate, just melt a bit that will fit in your piping bag 😊

      I find anything at the supermarket with a high cocoa content works ok! Here in New Zealand I often use Whittaker's 70%

    I have just discovered your channel and I love it. Can I ask...do you need to temper the chocolate for these decorations? I'd love to try these decorations for my husband's birthday

      Welcome ☺️.
      If you use compound chocolate you don't have to temper it, but if you're using chocolate with a high cocoa percentage or coverture chocolate then you do need to temper it.

    Long do you let the chocolate sit for to harden?

      It shouldn't take long, but it depends on the room temperature where you are. I would leave mine for about 5 or 10 minutes. Or put it in the fridge and it'll take 2 or 3 minutes. The chocolate will look different when it has set 😊

      Just until it's set (5mins or so). Sometimes it's so cold here I don't even need to asit sets hard very quickly at room temperature.

      There are some other brands too, wax paper or greaseproof paper, but my preference is baking paper.
      Alternatively you can use acetate paper too.

      I use what we call baking paper in New Zealand. You can use the white coloured one or the unbleached brown one.

      Your chocolate is probably melting because you're using one with a high cocoa percentage. It will work if you temper the chocolate.
      I used Pam's chocolate chips, a cheap compound chocolate.
