Making Pizza Dough In The Ankarsrum Original Assistant

    Flour:
    90% strong pizza flour
    10% type 1
    Fresh yeast 3g (0.2%)
    Fine sea salt 2.7%

    Thanks for the video. I wanted to buy the Ankarsrum. But now I know that I will buy a spiral mixer. This machine needs a nanny.

    You're running it way too fast. The dough roller is meant to slowly knead the dough together, not give it a spanking. Also start out with the arm free to press against the bowl and adjust it half an inch from the bowl once the flour has been incorporated. By doing that there's no need to nanny it after the flour is fully added, but you will need to add a few minutes of kneading compared to when using a hook.

    You usually don’t need the amount of flour called for when using the roller.

    I love my Ankarsrum. I’ve made bread, cookies, cakes, icing, butter and whipped cream so far

      Your dough looks too dry. Too much flour. And it’s running way too fast.

    Thank you, that literally helped me decide to get a spiral mixer. That looked horrendous, the dough would be way too hot and the way you have to mess about with that paddle - not for me!

    Man könnte die Arme der Maschine mit einer Schnur verbinden um einen bestimmten Abstand zu erhalten . An dem linken Teil sowas wie 2 Haiflossen um den Teig zu trennen .

      You can make 5 loaves of bread at once.

      @@PastaMakerCordy-qy4uz minimum is "smallest", not "largest. How small of a batch of pizza dough can you make with this mixer?

    Thanks for making this video. I feel sorry that you wasted a 1000€ in this piece of junk.
    I was considering this as an alternative to my KA that also sucks at making pizza and bread dough but now I am convinced what I need is an Italian spiral mixer like the famag grilleta im5 or the PEB Atena . Horses for courses…

    That's what I found with my Ankarsrum - you can't leave it unattended, it needs constant nannying.
    I hardly ever use it now, my Kenwood Chef can just do the job unattended - just fire & forget.

      but the nannying is part of the fun hahah... i love watching it get done, and its so easy so clean.
      but you should try to half the recepie if u dont want to attand it.
      if u half what u are making u dont ned to worry, or lock the arm 2 cm from the side

      I think it mostly doesn’t work because it is a piece of junk for dough work…. At least that the impression it gives
