Carne Guisada | Tex-Mex Queen

  • Enjoy a nice warm bowl of Carne Guisada as Vianney shows us how to make her mother’s winter time comfort food that had people lining up around the block!
    INGREDIENTS:
    3 pounds sirloin beef, beef stew meat, cut into bite sized pieces
    2 tablespoons olive oil
    ½ onion, diced
    2 tomatoes, diced
    4 tablespoons flour
    2 teaspoon garlic powder
    2 teaspoon cumin
    2 teaspoon salt
    2 teaspoon pepper
    4 - 6 cups Beef broth
    DIRECTIONS:
    1) In a large skillet or Dutch oven heat oil over medium high heat. Brown beef, working in batches, Place beef on baking sheet until all is browned. Once meat is all browned, add onions, and tomatoes, stir, continue cooking, scraping up all brown bits in the pan.
    2) Return meat to pan, add flour and cook until flour is cooked. Add spices, stir to mix and add beef broth. You want beef to be covered.
    3) Bring to a boil, reduce heat, simmer until meat is fork tender and sauce has thickened, about 40 minutes.
    4) Serve with rice and beans or with tortillas.

    There is something about carne guitars, rice and potato salad that remind me of quinces, weddings and mass birthdays where you have to feed so many. I left the valley 8 years ago and I miss the food
