Very interesting , this concept about the "fifth", and it is incredibly wonderful! I'm just getting back into guitar after decades away from having taught myself as a teen, long before there were great instructors on CZcams such as yourself. he's playing the Am & Bm root 6 minor barre chords... beginning as a power chord and then reaching his pointer finger back to play the minor third. rather than the open chords, with a little more control over when the listener hears said minor third :) thanks for pointing this out Brian - I think that's worth a video on, plus I just got to see Stone play bass!
Honestly, if you're playing it solo, play it the way Ryan teaches. Sounds way better, especially on an acoustic.
