Hello, wow how fascinating! All this information was so incredible! Those records were mind blowing! I love learning about how things came about and how people used to do things so long ago with what they had compared to now! I am going to give this a whirl maybe not as large once i find out where in my area i can find some of the bird game meats you suggested. I am sure you can substitute another poultry if need be but would really like to try something that i have never had before! Thank you, that pie crust looked amazing! Happy eating!

It looks lovely, but I would have filled the gaps round the pie (where the meat has shrunk back) with Jelly, from boiled trotters or even just gelatin made with meat stock. This prevents the meat from falling out of your pastry when a wedge has been cut. All the same, a lovely pie!
