- Gooday everyone and in this video I not only cook a regular favourite of mine - a Spaghetti Ragu (Bolognese) - I talk about a new wireless microphone system I'm using, my recent roadtrip, and news of the next upcoming canal voyage, Season 10 of Travels by Narrowboat.

Grana Padano is quite similar but somewhat inferior to Parmagiano Reggiano. It is really best used when grated into a dish. It is not terrible but not quite up to Reggiano in quality. Peccorino Romano could also be used ... just do NOT buy a tin or container of pre-grated Parmagiano or Pecorino as these can often be faked concoctions. A block of the cheese, hand grated, is the best. What you created is a Ragu but not a Bolognese. No big deal as a "Bolognese" is simply a specific variety of Ragu and many variants do exist. I have made a Ragu with just ground lamb and it was quite good... but I would not dare call it a "Bolognese".
That'll be why I called it a Ragu, then?
Kevin, just as a reminder.... Many of us discovered your videos during the pandemic. It was a very stressful time for the whole world. You made it better for thousands of us (or more) that were able to escape and relax with the sound of that beautiful engine. Tip from my Italian family, put a carrot or celery into your sauce to reduce acid and establish a natural sweetness.
A carrot hey - I'll do that next time. Sounds good.
1/2 onion + carrot + celery = Italian 🇮🇹 sofrito, the base ingredients of a Ragu and many other Italian meat dishes. No one’s Italian nonna ever put olive oil in the pasta water. Although some pasta is dressed with a little olive oil, on the plate, after it is cooked (always al dente) … and remember, never ever put cream in pasta alla carbonara : No cream, please 🙏 ☮️😀

Found the videos on Amazon during the pandemic. You helped get through many sleepless nights. Very soothing and therapeutic during a rough patch. Many thanks.
The cooking segments have come to be some of my favorites. A few pro-tips I've picked-up over many years:
-Do get the pan hot before adding the oil and get the oil hot before adding the veg. The heat will allow the veg to cook without absorbing the oil and also help the pan from sticking.
-Before draining the pasta, add a tablespoon or so of the pasta water to thicken the sauce.
-A dash of olive oil to dress the drained pasta will keep it from sticking/clumping.
-100% agree on the aromatics (carrots, celery, and onions - the holy trinity. And lots of garlic, YES.

My habit is to watch TBN right before bed. The excellent camera work, slow pace and gorgeous scenery is calming and creates a good mind set. I've watched all your vids twice and I've been itchy for some new footage, so I checked out a few of the other narrowboat vloggers. TBN is by far my favorite. There's something about the pace, scenery and camera work, plus the background of Aslan's heartbeat and the lack of extraneous chatter that hits all the right notes. It's obvious that you love the life you've chosen. It's a perfect foil for your creative abilities. I'll be very glad to see your new seasons.
