Literally my favorite dish!!!! So freaking delicious and so dang easy!!! I make them all the time. To make it easy and quicker I will often use a fully cooked rotisserie chicken or even the bags of Tyson grilled and ready chicken strips. Yummy! I'm just here to make myself hungry.

Tip: if u want the cheese to melt faster and the tortilla not taste so burnt, pour a splash of water on the pan and cover it with a lid. Youll get a crispy quesadilla

Just tested this recipe! Ran out of sour cream so I used creme fraiche and subbed the jalapeños with pickled Thai chilies. It’s wonderful, highly recommend you make it! 🤤
I mixed this recipe with your other "tinga quesadilla" recipe and it came out delicious. I did the chicken the shredded way like the other recipe, and then did the sauce you made here to put on the quesadilla. My husband and son loved it. Added bits of green onions and cilantro to the chicken. Super juicy n tasty. Thank you!
