Hi Jacob, I don't know if this is relevant, but I play all the games (no simulation save Spring Training) in a Yankees franchise I have, which is now in its mid-second year. There is absolutely a correlation in performance for me - players like Oneil Cruz who I struggled with before kicking to AAA had negatives to their contact and power ratings. Pitchers who give up home runs get negative hr/9's. Alex Reyes (who had a very low BB/9 rate) improved that rating significantly (+10 in the first season) because I rarely walk batters.
However, I also saw what you experienced with Betts. Aaron Judge, upon turning 30, experienced a similar net of -1s and -2's, most of which disappeared following spring training and the opening month.
Additionally, when I switched to manual fielding I made a ton of errors for about two weeks worth of games as I adjusted. My infielders (who made at least 5 errors each in that time period) had their fielding ratings decrease by -2 or -3 irrelevant of their potential or age. These ratings righted themselves when I stopped making errors. When players get into a slump, their contact and power decrease. Perhaps the most interesting observation is young Wander Franco, who I generally only have bat vs. lefties due to his platoon characteristics. His contact v/righties has dropped -2 or -3 in both seasons so far, as he only hits about .150 against them as opposed to nearly .375 for lefities. And he's a 99 potential 23 year old.
Don't know if any of that is helpful or even related to simming, but those are my experiences as someone who plays all the games myself.

Every sports game strongly regresses after 30. I literally rebuild every roster with no one over 29 & no lower than B potential unless I genuinely need an overall boost to a starting player to win games for 1 season. Which is admittedly boring, sooner. I’m more likely to redo a franchise (&or switch teams) after 1-2 seasons.
The most realistic sports game regression are games that added age peaks to their potentials. IE; a player could peak between 23-26, then regress. Or a player could not peak until 28. But it’s too difficult for casuals to predict/understand.

Looks like 34/35 is the drop off
