    Hello! Thank you for all the recipes. My husband is Jamaican and I'm Portuguese, he used to cook but now he become a truck driver so I'm trying to learn how to cook his favorite Jamaican dishes for when he comes home and to pack for the road!     My husband learned this from his Jamaican mom when he was a little boy and we have it often here. He does it exactly the same way and it ALWAYS turns out perfectly!! He swears by Coconut Cream rather than Coconut Milk too. THANKS for anther awesome video, you remind us of his mom!

    I enjoy watching you so much! I have never tried any of your recipes because I am honestly very intimidated, but they look divine. This will be the first one I try, now I just have to choose a chicken recipe to go with it. I will make it this weekend as I will be off of work and will have time to dedicate to it.

    I use pressure cooker for 20 minutes to boil the peas. I use easy cook rice. Love your channel ❤️

    Fay, it is always a pleasure watching you cook! I never thought of using coconut milk. Going out today to get red beans. I love black beans can I use that instead?

      Thank you for watching! Yes, you can use black beans. Jamaicans use either red beans (kidney beans) or gungo peas (pidgeon peas), but most similar beans will work.

    I will try coconut cream next time and beans from scratch...I can never get all the liquid to cook out of my rice without burning it but I will try again

      Burning? Once it comes to a boil you need to turn down the stove to low. Sounds like your using too much liquid. Give our recipe a try and let us know how it goes. Thanks for watching!

    Hello, I have an 15oz can of cream of coconut. How much of the can do I use? Thanks for the video and your response!

      If want to use coconut milk instead of the creamed coconut we use in the video, just replace one cup of water with 1 cup of coconut cream. You don't want to use the whole can. Please visit our website for the complete recipe - link in show notes above. How that helps!

    Hi please forgive me if this is a silly question but I herd that the water after soaking the beans has to be thrown away and then boil the beans using fresh water but I noticed in the recipe u use the water that the beans were soaked in

    I REMEMBER WHEN MY DADDY USED REAL COCONUT..HE WOULD PUT IT IN THE BLENDER THEN SQUEEZE THE MILK OUT OF IT..SOAK THE PEAS OVER NIGHT..NOW I TAKE THE SHORT CUT LOL LUV YOU FAYE!

      I am from Guatemala,but my dad was from Jamaica, I never got to meet my dad's side of the family, I like Jamaican food batter than Guatemalian with a few exceptions. I do the rice with fresh coconut milk.

    Miss Faye is there ANYTHING I can substitute for the scotch bonnet pepper? I live in a small town and have called around to every market and NONE of them carry that pepper. I really want to make this and a few other dishes like the brown stew chicken but I fear I maybe unable to without that pepper. Please help. Thanks

    Wow.... You make it looks easy.... I just want to ask, what coconout cream is? Is it the same that coconut oil? Or what would it be replaced it for? Well, I am mexican but my bf is jamaican so Id like to surprice him with it someday and I like it too. Thanks for sharing.

      coconut cream is the solid form coconut milk. you can use either. you can find it in the caribbean section of your grocery store.

      To be clear, if you want to use coconut milk instead you must replace some of the water with the coconut milk, we suggest 1 cup. If you just add coconut milk you will have too much liquid. Thank you for watching! Enjoy!

    I love this recipe however i’m really confused about the measurements! My sister tried this and the rice keeps coming out soggy. She used coconut milk and the water from the red kidney beans :(

    What kind of rice do you use? Long grain never cooperates with me when I make rice and peas.

      Anyi boii You should use 4 cups of cooking liquid to two cups of rice. I stir the boiling rice for five minutes before turning down the fire. That helps to prevent burning. After 25 minutes of total cooking I turn off the fire and take off the lid to let the excess moisture evaporate.

      rohanedmonson Yes, well aware of the ratio 1:2. Also, how to make rice and peas have made it for years but with either basmati or parboiled rice since Long Grain never cooperates. But thank you I appreciate your comment. :)

      rohanedmonson What kind of rice do you use? Because Long Grain takes about 45 minutes or so to cook not an easy cooking rice at all and you didn't add coconut milk or cream of coconut or even thyme flavour into pepper etc.

      rohanedmonson And I assume you use can beans? Fresh Beans you have to soak overnight or boil for a while to soften and season with garlic and thyme some salt etc just a note that this also contributes to cook time and method etc

    I am not a Trinidadian, Eat almost all island food but I think Trini can cook rice n bean much better than a Jamaica .even the best oxtail Trini can make.. but grannie👩🏻‍🦱 urs looks good, hope taste good as look, no offense to U J’s but is true🤪😄
