    Ingredients:
    Raw rice 1 cup
    Jaggery 3/4 cup
    Poppy seeds 1 tsp
    Cardomom
    Preparation
    Soak the rice for 2 hours.
    Now drain the water completely and dry it in the towel for 10- 15 mins.
    Don't dry it completely.
    When we touch the rice, it should stick in the hand
    Grind it into fine powder along with cardamom.
    Take jaggery in a pan .add 1/4 cup water and let it melt completely..
    Make sure to keep the flame to the lowest..once jaggery melts , boil for couple of mins and check for the consistency.
    Add little drop in water..if it don't dissolve in water then that is the consistency you need..
    If taken in hand, you ll.able to make ball out of it. Switch off the flame.
    Mix it with the flour little by little and give it a good mix.
    Now the consistency of the flour will.be little loose.
    Store it an airtight box.
    Leave it in to temperature for a day.
    The next day when you open it could have turned thick.
    Now use banana leaf and apply oil or ghee in the leaf and in the hand and make shape.
    Deep fry it in oil in low flame..it takes less time to cook it.
    Tip:
    Consistency of jaggery plays a huge role in making athirasam.
    If you add more water the consistency make take time..check accordingly.
    It can be kept in room temperature for a day and then should be stored in refrigerator.
    Stays good for a week in refrigerator.
    In the video we have made huge quantity with 2kg rice.
