    I love how arbitrary these measurements are. A spoon of this, a bowl of that, two scoops of the other thing. This is exactly how I think cooking at home when not using recipes. It's really nice for fine tuning a recipe to specific tastes!

    Those are some good eggs! As someone who kept chickens, the color of the shell doesn't matter one bit. It's all about what you feed the chickens. A rougher surface to the shell indicates they are getting good calcium and mineral intake, and a darker yolk is also indictive of being fed a nutritious balanced diet. Our home raised chickens eggs were far tastier than anything you can get at the grocery store.

      This is why I started buying cage-free eggs at the supermarket years ago. The yolks are thick, delicious, and deep orange color. No more pale yellow yolks from factory farmed eggs that have no flavor. Hens who live happily and eat healthy food lay much tastier eggs! ❤️

      She said that 4 eggs are enough, but in Chinese culture, 4 is a bad luck number, therefore She used 5 instead. The number 4 and the word "death ' have a similar sound , so Chinese people are adverse to using the number 4.

    Those eggs look great! In order to up my protein and vitamin intake I've been making scrambled eggs with sauteed spinach and Parmesan. This looks like an excellent alternative. Filling, and low carb too.

    I actually attempted to make an omelette the other day with some water in the egg mix (helps to uniformly dissolve the seasonings) but I put too much water so when I was trying to scrape the bottom to flip, it fell apart easily like scrambled eggs. This explains it 👍

      dude, unsaturated vegetable oil is healthy and decreases the risk of atherosclerosis. On the other hand saturated animal fats (in pork for example) are really bad for your heart and blood vessles. So this recipe is correct. A bit of animal fat for flavor and plenty of veggy oil for health

      If you want more "delicate", fluffier scrambled eggs add a little milk. It is also a rescue to your scrambled eggs if you overcook them and they get too dry.

      All the nutrients are in the water.....LOL....(after cooking the egg) anyway, she should have used it as the broth for her carrot, celery and pork~ (don’t waste any of those egg water!!) As a chinese, it can be also used to cook rice vermicelli!! 😉 cheers~

      Sometimes the inside egg touches your fingers cracking it on its way into the pan, and if the eggs are farm fresh or natural they usually have dirt/poop on it, so you’re contaminating your food if you don’t wash the egg shell first. I’m not sure if this method is required of store bought eggs but 100% recommend washing fresher eggs.

    Ещё в 1972 году на уроках кулинарии нас учили мыть куриные яйца . Я всегда так делаю . Но в роликах никогда этого не делают . Спасибо за то , что Вы учите правильно готовить яйца .

      @@user-ty5uo8fi8m Вот что говорит интернет: "Ни в коем случае не надо мыть яйца сразу после покупки в магазине и в мытом виде хранить их в холодильнике. Это нарушает целостность скорлупы. И как раз те сальмонеллы, которые на скорлупе еще остались, могут проникнуть внутрь яйца."
      В общем, надо мыть перед готовкой.

      Definitely sounds much better for me. I feel that these eggs cooked this way if you wanted to cook just eggs and did not include all the meat and veggies would be essentially flavorless. Perhaps a great moisture and texture, but taste like nothing. Cooking in a stock should be extra tasty.

    Já tinha ouvido falar do ovo cozido em água, mas a ideia sempre soou estranha, até agora ksksksk parece delicioso, me deixou com água na boca 😋🤤 vou tentar qualquer dia, o problema vai ser só achar alguns dos temperos. O ruim de receitas do oriente é isso, parecem ótimas, mas pra fazer em casa às vezes tem que girar por São Paulo pra achar alguns ingredientes kskksksks de qualquer forma, ótimo vídeo, adorei sua narração 💜

    And I think this is the first time I see a cooking video showing how eggs are washed. In my family, eggs are simply rinsed under the tap and they don't think of washing them thoroughly, as my relatives say "Infection does not stick to infection" (a phrase from my country, usually used when someone eats food after another person), so I somehow never thought about putting eggs in salt water

      @@user-xd8hm1iq6m Да нет. Я просто с этого рецепта взял только основное, закипятить воду_ и слить туда яйчную массу. Больше мне ничего не нужно. Для меня главное; приготовить яйшницу без масла..Остальные детали я отбросил.

    The dish is absolutely beautiful. I very much appreciate the care, love and respect you showed to your ingredients. I usually always add a little water to steam my scrambled eggs for a fluffy light texture but have never contemplated poaching fully in simmering water. I would think it would soak up too much water and become soggy. I have been taught to believe one should never "boil" eggs it is too harsh for the delicate nature of an egg. Egg protein coagulate around 145-150F; boiling water occurs at 212F. A good simmering temperature of 160-180F is perfect. I'm my country "boiled" eggs are very common but I dislike that expression; almost as much as I do when people use margarine and butter interchangeable they are 2 very distinct and different products 😆

    While I probably won't be doing the stir-fry portion. That preparation of scrambled eggs is a great alternative for someone with heart issues like myself. I can still have eggs, but the oils involved in cooking them aren't a good thing. So thank you for introducing me to this preparation method. I'm going to try it.

    Hola te veo desde Mexico! Me gustó mucho la idea, gracias! solo recuerda que el glutamato monosodico no es nada bueno para la salud, allá se puede conseguir solo? Aquí solo viene integrado en los alimentos pero mucha gente trata de evitarlo por lo mismo

      Msg is to enhance the flavour, if you do not wish to add it for whatever reason, don't add it. Also msg does not harm health if eaten in small amounts, it is like salt, add too much and you'll also be thirsty.

    Thanks so much Big Sister. My baby like the egg. If I fry it with butter he usually doesn't like it because it is more dry and hard. This way the scramble egg is more soft and I can add Dashi powder to the water which is his favourite flavour. Thank you so much. Bless you.
