    This lady’s hygiene and preparation is first class, good to see high quality street food, I would eat from there no problem.

      IDK man. From what I have learned: 1. You never (never) part freeze prepared meat ever. Either you cool it in the fridge at around 8-10°C for no longer than 12 hours or you deep freeze it which would require natural defreezing in a fridge (which can take up to 24h depending on thickness) anything else deminishes taste and actually does invite the meat going bad; 2. One does never press meat unless you are making minced meat, one hammers it with a wooden hammer or club and yes, that makes quite the difference; 3. By buying whole eggs you always run the danger to have pieces of the chalk in your food, those can cause internal bleeding and wounds easily. Buy preprocessed eggs with whole egg yolks and egg white. That gets rid of the danger and makes you save time (there are vendors which also sell those at higher grade with eggs only coming from farms with conditions 3 and 4 to comparable prices); 4. puncturing the meat is a ok as long as the meat has room temperature; 5. reusing the filtered oil is a nono unless the filter is damn super high grade; 6. The pepper seeds should not be added to the dish, once those seeds come in contact with the very hot oil, they develop a bitter taste which can harm the dish. If the seedes are eaten unprocessed in stuff like salads or sauce, no bitterness will develop.
      Hygiene is very good as this seems to be a small takeaway shop. Very nice.

      @@simonsilence Firstly, the meat was clearly defrosted as she removed it from the packaging and sliced it.
      Secondly, may I suggest you take a course in Home Economics and read a few reputable cook books, the things you state make no sense at all.

      A lot of professional fryers have filter systems where you can filter old oil which cleans it and gives it a few days extra life.

    Como argentino, uno de los países con más expertice de milanesas per capita en el mundo, me siento obligado a decir algunas cosas:
    1) señora coreana. usted hace milangas. el término es el máximo honor que le puede entregar un comensal argentino a su fritura angelical. felicitaciones.
    2) el nivel de boliche que tiene es maravilloso. cuando vi que tenía una maza hidráulica para aflojar la carne supe que usted no venía a volver en primera ronda. usted iba a quedarse hasta el final. pero la verdad, nunca imaginé que se venía un bon o bon de milanesa, soñadora hermosa.
    3) entiendo que allá acostumbran más al cerdo. o qué tal vez baso su receta en esa insípida prima alemana de la milanga, el schnitzel. pero hágame caso, empiece a meter un poquito de ternera y va a ver cómo duplica las ventas.
    En fin. La quiero mucho y ojalá algún día pueda comer sus milangas. Un beso, doña.
