Foods you can't buy: Dandelion "honey" - For the noms!

  • Some footage I still had lingering on my drive, a food you can't buy: dandelion honey.

    Details are as follows.
    1. Dandelions are only picked when a good amount of them are starting to go to seed. That way, the bees will have had an opportunity to do their start-of-season thing.
    2. I got them from my garden. No weed killers on there so they're safe.
    3. We leave some flowering ones in place as well. No need to be greedy.
    4. As much as possible I used the flower heads, and of those mostly the petals only. I ended up with approximately 25 grams of cleaned dandelion petals/heads to 100 ml of water and 100 grams of sugar. My apologies for the unusually sloppy measurements this time around.
    5. The lemon helps the colour but serves two additional puposes. Real honey is slightly acidic. The citric acid in the lemon also helps invert the sugar as it's cooking - this means it's being split from scurose into fructose and glucose. This helps stop the sugar from re-crystallising once the syrup is made.
    6. The syrup is then reduced waaay down and taken off the heat at 105 degrees C (approx. 221 F). You'll be able to draw stripes in the syrup in its hot state, after cooling it will get more syrupy. If it's not thick enough for your liking, you can always try reheating and adding more sugar, or just reheating and reducing a bit further.
    7. So this can be entirely vegan for those of you who are so inclined, but it's also just a nice syrup in and of itself. I always thought Rooibos tea has a honey-like quality to it; perhaps try using that instead of water and let me know how you get on with that.
